I just made this however I did not use any sweetner. My mixture was quite thick and it was difficult to figure out how much in grams a cup of cocoa powder is for mine it was 90 grams. Is there any way to make it more of milk chocolate bar? I also only have Erythritol Powder for my Sweetner would this work in the recipe? If so how much of it would i need.

Thanks so much for sharing all of your hard work with the world! My son recently started the Modified Atkins Diet for seizures. We’ve been told to keep his net carbs (total carbs minus fiber but not minus sugar alcohols) around 20-25/day, and he’s having a hard time giving up all of his beloved carbs, including chocolate. I was so excited to find this recipe! 1.8 net carbs is the perfect splurge! The first batch is in the fridge, but now I’m afraid to give it to him. From our count, it looks like each serving has almost 10 net grams of carbs, mostly from the Swerve (2 from unsweetened chocolate + 120 from Swerve + 11 from unsweetened cocoa = 133 net carbs, divided by 14). Please tell me I’m missing something … my son is salivating, and I’d love to let him have a treat! I’m new to all of this, so maybe there’s a reason I don’t have to worry. (I’ve seen Swerve in another recipe for patients on a related diet, the ketogenic diet, but I just don’t see how it’s safe if we can’t subtract sugar alcohols.) Thank you!

Good question. Because although you could melt plain unsweetened chocolate and stir in some sweetener, it would likely seize like crazy. There’s no way, with something like erythritol, that you could get it to mix in, without getting a goopy, thick mess. If you wanted to use a liquid sweetener, like sucralose, maybe but I don’t like sucralose. And if you have to use a significant amount of the liquid sweetener, your chocolate will again seize. It’s very tempermental stuff. An additional oil, like cocoa butter, helps it smooth out and allows it to mix nicely with the sweeteners. And cocoa butter is so hard at room temp, it’s a good choice because it will firm up properly, rather than need to be refrigerated.

Super low carb or Carb free are the only diet that worked me and it was HARD…I became a raging beast during the 1st 2 weeks. But for 3 months straight, I lost about 30lbs. Unfortunately my weight all came back and then some when I started going back to school and eating carbs again due to stress and lack of prepping ahead of time. Now I definitely want to go back and stay low carb as much as possible. Reading this is helping to motivate me 🙂 thank you.
Hi Barb, That can definitely be it. Losing when you are close to goal can be more difficult. It could also be that your body’s healthy weight is a little higher than what you’d like – which doesn’t mean you can’t lose, but makes it more difficult. If just eating Keto foods isn’t working, double check the macros for your weight and see if the amount you’re eating needs to be adjusted. You’ll find more help and support in our support group here.
NOTE: I’m a little nervous about the super sweet blend. I’m imagining that extra stevia has been added to bump up the sweetness. When stevia is added to chocolate, it can increase the bitter flavor compounds in both the chocolate and the stevia. Go slowly and taste as you go. Another mineral you may want to supplement is potassium. While there is no concrete evidence that a dramatic potassium loss occurs on a low-carb regimen, Sondike says to ensure against problems he recommends patients use Morton's Light Salt -- a potassium chloride product that he says can add back any of this important mineral that's lost. Hi Lisa, Sorry you had issues with it. It’s hard to say what went wrong without being in the kitchen with you but can try if you can provide more info. Which version were you making? Are you talking about the pudding layer with version 1? If so, it does firm up more in the fridge but you also need to add enough xanthan gum to make sure it thickens. Let me know what step seemed off and if anything was different from the instructions.
Eat fat only until full. Don’t eat any more than you can handle. Sometimes people think they have to eat lots of fat whereas it is really eating the fat that naturally comes with a meal (i.e:not trimming a fatty steak) and adding as much fat as feels right to your meals through sauces and cheese for example. I don’t go our of my way to eat extra fat. If you are still hungry though but don’t feel like the heavy feeling some fat brings, add some coconut cream to your smoothies.

Most vegetables are low- or moderate-carbohydrate foods (in some low-carbohydrate diets, fiber is excluded because it is not a nutritive carbohydrate). Cookies made with sugar tend to spread a great deal more than their sugarless counterparts. You can use this to your advantage when making sugar free versions of shaped cookies like thumbprints, or using recipes which call for a cookie cutter – what you put into the oven is going to be basically the same shape and size as what you take out. When you’re making sugar free drop cookies, it’s a good idea to flatten them just a bit with the bottom of a glass dipped in flour before you put them in the oven. This will make them look as though they’ve spread.
Unfortunately Ghirardelli has a facility with potential for cross contamination with nuts. (Chocolate is one of the trickiest foods for a nut allergy! So many cross contamination labels!) Guittard isn’t safe either. Thanks for the Scharffenberger recommendation- I emailed them to see. I’m hoping that since they’re a part of the Hershey company, that no warning label will mean good news. Hershey’s is fabulous about putting warnings on labels. The last time I made chocolate chips, I made them with butter. They were good, to be sure, but definitely a little on the soft side and they needed to be stored in the fridge and then added to the recipe just prior to baking. And although delicious, they didn’t quite live up to that true chocolate-chip flavour I had in my mind.  Still, they were a good approximation and I was satisfied.  But since that time, I have been playing around with other ingredients in some recipes, including cocoa butter. Unlike butter or coconut oil, cocoa butter stays solid at room temperature and it takes a fair bit of work to make it melt. For a bar of chocolate or a chocolate chip, this is an excellent quality indeed.

Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. They used to moan and complain there are no cereals in the house, but they have learned to cook their own breakfasts and look for what ingredients we have rather than reach for a box of cornflakes
In a 2005 study published in The Upsala Journal of Medical Science, for two groups of obese patients with type 2 diabetes, the effects of two different diet compositions were tested with regard to glycemic control and body weight. A group of 16 obese patients with type 2 diabetes was put on a low-carb diet (1,800 calories for men and 1,600 calories for women) that consisted of 20 percent carbohydrates, 30 percent protein and 50 percent fat.
Dump the ingredients into a 13x9 inch glass pyrex baking dish and lay a sheet of waxed paper over the mixture. First with your hands, then with a flat bottomed glass, press the chocolate crust mixture firmly into the dish. Remove the waxed paper and continue with the recipe or *bake in a preheated (350) oven for about 10 minutes and then let cool completely. *This can be made the day before.

I started seeing a nutritionist, who has started me on a B-12 injection 2 times monthly, and a LCHF diet. He wants me to stay between 20-35 carbs daily for at least 3 months. He says I need to buy ketone strips, to make sure I don’t go into ketoacidosis, however, I am otherwise healthy, and not diabetic. Is this something I need to be overly concerned about? I’m on my 4th day of approx. 25 carbs daily, and other than a slight headache, I feel fine.


Sounds like perhaps your chocolate seized? Can’t say for sure but a few tips for next time: 1. Use good quality chocolate like Ghirardelli…don’t use Baker’s, as it tends to seize more easily. 2. Melt it double-boiler style, especially if you are using an electric range (it’s harder to control the heat with electric). Set a bowl over a pot with some barely simmering water. This takes longer but melts the ingredients more gently.
