Hi Tara. You are not missing anything, as I subtract erythritol. I don’t subtract all sugar alcohols because some do affect blood sugar. But erythritol is well studied and found typically not to. Most people do subtract erythritol because of this but since your son has such a specific issue, I honestly cannot give you advice with this, it’s too serious. That said, I do have another reader who’s sone suffers seizures and they do follow the keto diet and I know she makes him things with erythritol (Swerve). From the sounds of it, you ARE already following a keto diet if he’s that low in carbs. But again, I do not feel comfortable giving you any advice with regards to this except perhaps to say that you should investigate the reasoning behind NOT subtracting the erythritol on the diet your son is on. good luck and I am so sorry. I wish I could help more.
After you make the chocolate pudding it states to “Cover with plastic wrap, making sure it’s directly against the surface to prevent a film forming.” Do you mean to have the plastic wrap touching the top of the pudding? Or against the surface of the pan? I was going to use Press n Seal, but I’ll use plastic wrap if it needs to rest on top of the pudding layer. Thanks!!

If you are okay with it having more of a brown sugar taste and brownish color then go for it! The coconut crystals will be especially good in the crust I think. Stevia glycerite is a viscous super-concentrated liquid form of stevia that I feel is much less bitter than other brands. I am guessing that the nu-stevia is very similar to KAL Pure Stevia powder which I love but don’t use in my blog recipes as I try to stay more in-line with other bloggers so readers don’t have to buy 12 different products! You may need to experiment a little with your sweeteners just a tad to get the taste you want, so taste as you go. I would LOVE to hear how your sweeteners worked in the recipe as it may help someone else who may have the same issues with erythritol. Have a great week!

I just found your website and the recipes seem great! I just tried the chocolate candy bar recipe as I am craving treats so badly and can’t have them. However, I found the final product to be quite bitter. Did I do something wrong? Are there any parts I might change? I used almond milk. Did you taste the mixture before you let it harden in the mold? If it was bitter to you before letting it harden, you needed more sweetener. For some getting used to stevia is a big transition. I use the vanilla liquid stevia by the brand Sweetleaf. I have tried Trader Joe’s vanilla stevia but I didn’t like it as much as Sweetleaf. Also different brands of liquid stevia are made differently and the way they are processed to form the liquid will produce different levels of sweetness. NuNaturals vanilla stevia is much sweeter than Sweetleaf. Don’t dump out your bottle but try other recipes with it and hopefully you can use it up and not feel you wasted your money on it. I’m sorry you didn’t like the recipe.

Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

And these homemade sugar free chocolate chips bake well too, I am pleased to say. I added them to some brownies, and I also baked them up in my Keto Double Chocolate Muffins. They held their shape nicely and didn’t  totally liquify and run all over the pan, as I feared they might. They certainly held up about as well as any bar of chopped dark chocolate I’ve ever used.

I give 4 stars for the effort to make something good for the diabetes patients.The only thing I did not like at this product is that the sweetness is way TOO strong. These is a problem with most of the American sweet products. I just want to remind to the Americans that the sweet products should have more taste/flavor and less of an avalanche of sugar. This product is a dedicated diabetic friendly product , so, in my opinion, the sugary taste must be diluted/suggested. We need to re-learn from other cultures, particularly from Europeans, how the sweets suppose to be; not aggressive, more like suggested/guessed sweet, and , evidently , much more healthier.The big scale producers might use a scale of sweetness, lets say from 1 to 10 (lets say scale 10 for over 25g sugar per serving), so the customers could make their choice also! Hi there Libby, just to let you and your readers know, I have been low carb for over a year now, ( sometimes I fall down and have processed carbs, mostly when I am travelling away from home) and the good news is I was diabetic, and now I am pre-diabetic, which is huge :O) I have also lost a small amount of weight in the process ( still more to go :O) but this eating plan makes me feel normal again, not always hungry, and I am a lot healthier than I was :O) now all I need to do is make exercise a habit :O) So thank you so much for all the time and energy you put in to this site, and all of these wonderful recipes :O)

However, data from certain clinical trials has shown that low-carb diets, even very low-carb ketogenic diets, can actually help improve mood and reduce fatigue and hunger. This did not come out well for me. The consistency is good but the taste is super bitter. At first I didn’t add all the powdered stevia called for because it seemed like a lot of stevia for just the one bar. I wanted to taste as I went. I gradually increased hoping the sweet would outweigh the bitter but I just couldn’t seem to get it right. I took a small bit and mixed it with honey and that tasted much better. But, honey is too high in sugar for me so I was excited about using stevia. Not sure where I went wrong but I still appreciate the recipe!

Hi, Amy. Yes, you can replace it – it is ground really fine and added to other ingredients. The coconut helps reduce the carbs a bit, but you can use more almond meal if you want. The texture will be a little different, but it should still taste good. Do yourself a favor and make the pastry cream a day or two before you assemble, so it’s nice and cold. Let the assembled dessert chill overnight. Use full fat ingredients. Another reader used a lactose free cream cheese and her dessert didn’t set, but she may not have cooked the pastry cream enough, too. It should be nice and thick after cooking and almost stiff when thoroughly chilled. Enjoy. -Kim
While the above raw version is fantastic for using in no-bake treats or eating by the handful, if you want a version that you can bake with or that has the option of being oil-free, simply melt a bar of unsweetened chocolate and sweeten to taste with your favorite sweetener of choice. You can add a tsp oil for smoother results, but it’s not required. Pour into a parchment-lined container or candy molds, and freeze until firm. Then break into small pieces or pop out of the molds. This version needs no refrigeration and can be used anywhere you’d use store-bought chocolate chips.

Update: The old version of the chocolate pudding layer is back by popular demand! I've posted both options above, so you can decide which one you want. The older version takes longer and sometimes people have issues with thickening, but tastes more like pudding when you get it right. The newer version is faster but more like a chocolate whipped cream layer.

In January 2015, the Journal of Nutrition conducted two studies comparing lower-carb and low-fat diets, finding that of the two approaches, going lower carb helped people shave off more visceral fat, a type of belly fat that hugs organs and is linked to disease. (3) A meta-analysis published in June 2016 in Obesity Reviews also concluded that in obese people, a low-carb diet reduced fat over the course of a year (but not body weight), with the greatest benefits seen in a very-low-carb diet. I am wheat & dairy free for other allergy related conditions so find it hard to stick with the low carb diet. I simply cannot do any cream or milk products & tolerate small amounts of cheese. I find food very boring & then fall back on the gluten free junk. I have added coconut cream/ yoghurt & almond milk to smoothies with berries or a banana plus protein powder for breakfast. I know the banana not great but really miss real fruit. Frozen berries for most of the year not really doing it for me. Any ideas for snacks and treats that r still low carb so I don’t feel like a total ‘food leper’ my husband’s tongue in check explanation for me.
Yay, another kiwi has discovered my website xxx I tend to shop mainly at New World and buy seeds, nuts, almond meal etc when they are discounted. The bulk bins are fine, but check the price per 100g, sometimes they are not as good value as regular packets that are “on special”. I also buy my veggies form the fruit and veg shops when I am near them, I find the supermarkets to be incredibly overpriced generally. Good luck and enjoy all the new recipes here. 🙂
