I give 4 stars for the effort to make something good for the diabetes patients.The only thing I did not like at this product is that the sweetness is way TOO strong. These is a problem with most of the American sweet products. I just want to remind to the Americans that the sweet products should have more taste/flavor and less of an avalanche of sugar. This product is a dedicated diabetic friendly product , so, in my opinion, the sugary taste must be diluted/suggested. That’s a great question, Tania, and unfortunately, the problem is also the solution. Saturated fat is, by definition, solid at room temperature (as opposed to unsaturated, which is liquid at room temp), so it is what makes the chocolate hold its shape. If you were to use another fat, you’d have to add some sort of stabilizers, either chemical (gross) or starch (which would make the chocolate taste more like a brownie, but with a really bad texture, and I wouldn’t recommend this). I have seen fiber, such as acacia or psyllium, used in commercial chocolate, but I have never tried it myself. So, unfortunately, coconut oil is your best bet in this case. It does have many health benefits, but I understand that it is not appropriate if you have to watch your saturated fat intake.

Carolyn, I made this tonight I couldn’t find powdered swerve so I use the granulated version that I ran through my food processor. My first attempt was a glob of goo that was very gritty and unbelievably bitter. I decided to add more cocoa butter and melt the batch I made it came out very smooth and creamy but still really bitter. My question to you could I take my second batch and melt it in a double boiler and add additional sweeteners of some sort maybe stevia to come up with a less bitter chocolate?

I’ve never used Kal sweetener for stevia and not sure how sweet or not sweet it is. I truly has seen just in using NuNaturals and Sweetleaf a big difference in sweetness. The bitterness would not be because too much was used, it is often that not enough is used. I’m sorry with all that happened but happy you could still salvage it. I’ve made the recipe twice since I’ve posted it and had no problems, but I like the taste of a dark chocolate. I will try it with a different brand of powdered stevia, I have one form Trader Joes I can try and will post the update.
Thanks Brenda for your feedback. I was not aware of the bitterness of stevia in relationship to how much or how little is used. I will keep that in mind next time I use the KAL brand. I usually use Sweetleaf but was out and had the KAL in the pantry. I too love dark chocolate so that was not the bitterness I was tasting. I typically eat scrambled eggs with turkey, a piece of wholebread toast and coffee for breakfast, salad and breast of chicken with vegetables for lunch and something similar (chicken or red meat or salmon) for dinner, with 2 snacks of 3 rice cakes with 150 gr. of turkey and a protein shake if I go to the gym (weights training 3x week). I would agree with many, but not all of your points. “Fat and carbs don’t make us fat. It’s only processed fat (vegetable oil) and processed carbs (white flour and added sugar) in processed foods (foods with more than one ingredient) that inherently lead to overeating and weight gain.” I have also said this throughout my website and one of the biggest myths I try to bust is that we are not NO carb we are LOW carb. By removing processed food from our daily diet, we almost become low carb by default. Nutrient dense, low-carb whole foods are encouraged but not to be overdone. Lower carb diets reduce insulin resistance and inflammation. Lower carb diets, with healthy fats, gives a better blood lipid profile and lower TG which is the best predictor of heart health. There are so many benefits from eating nutrient dense lower carb whole foods.
I used option 2 that does not call for the xanthan gum. The recipe called for “heavy cream” which I used. Should I have used “heavy whipping cream?” “Pecan meal” I used was “pecan chips” made by “Fisher”. Hi Mylene, my first question will be did you substitute any ingredient in the recipe? If the outside is cooking faster it probably means that the center of the tortillas was thicker in the center. Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! I am grateful for stumbling upon this website…I think my biggest challenge will be removing my favorite International Delight Coffee creamer from my daily cup of coffee…I can do that gradually. The film originally included Zen watching scenes from Bruce Lee and Jackie Chan movies (in addition to Tony Jaa), but these scenes were eventually cut due to licensing problems. These licensing problems also caused other scenes to be removed from the original movie. The ice factory scene was originally shot as a split screen of Zen imitating the exact same moves she had seen Bruce Lee do in a fight scene from the movie The Big Boss (1971). It showed a clip of Bruce Lee doing his fight moves at the same time as Zen was mimicking Bruce Lee's moves. The warehouse scene was shot in a similar fashion, but this time it showed a split screen of Zen imitating Jackie Chan, wherein she would do her interpretation of a Jackie Chan fight routine. Eventually not only were the split screen scenes removed, but any scenes that involved Zen performing moves that too closely resembled fight sequences from Bruce Lee or Jackie Chan movies were all cut as well. NOTE: I’m a little nervous about the super sweet blend. I’m imagining that extra stevia has been added to bump up the sweetness. When stevia is added to chocolate, it can increase the bitter flavor compounds in both the chocolate and the stevia. Go slowly and taste as you go. YUMMY! These came out perfect. The only changes I made was to reduce the cocoa powder by 2 tablespoons and added 2 tablespoons of heavy cream POWDER(Anthony’s)in it’s place. I also used half powdered swerve and half powdered bocha sweet. They are so good!! They taste more like milk chocolate to me. I bought the chocolate chip molds and the candy bar mold and the recipe was enough to make around 300 chips and 1 full size bar. Thank you!

I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)
The original Atkins diet became popular largely because it allowed people to eat foods forbidden on most other diets, such as cheeseburgers (without buns). More recently, the diet has been revised to include sources of healthier fats, such as fish and olive oil, and other low-carb diets have shied away from saturated fats as well. But in practice, once you stop eating bread, fruit, and beans, it’s all too easy to eat too many fatty animal foods. After all, how many foods can you take out of your diet?
Studies have shown that people losing weight with a low-carbohydrate diet, compared to a low-fat diet, have very slightly more weight loss initially, equivalent to approximately 100kcal/day, but that the advantage diminishes over time and is ultimately insignificant.[6] The Endocrine Society state that "when calorie intake is held constant [...] body-fat accumulation does not appear to be affected by even very pronounced changes in the amount of fat vs carbohydrate in the diet."[6]

Pumpkin is a starchy vegetable and carrots do indeed grow below the ground but aren’t as high in sugars as pumpkins. Take a look at this list of carbs in vegetables to see the comparisons. I also eat beetroots which are higher in carbs but they are so packed with nutrition, I allow it. Nothing is out of bounds, depending on your level of carb intake you want to reach.
Obviously, reductions in the desire to be physical active, experiencing brain fog and being cranky are pretty counterproductive for people looking to feel healthier and lose weight, so these effects are something to monitor yourself for. If you’re feeling very sluggish, moody, or like you have “brain fog” and can’t think clearly while after drastically reducing your carbs over the course of several weeks — especially if you changed your diet rapidly and reduced carbs to very low ketogenic levels — try reintroducing some carbs several days a week until you feel better. Experiencing the benefits of low-carb diets can take some trial and error, plus some patience.

I just made this however I did not use any sweetner. My mixture was quite thick and it was difficult to figure out how much in grams a cup of cocoa powder is for mine it was 90 grams. That said, you don’t have to jump in with both feet. Schmidt recommends trying to eat under 200 g of carbs a day initially (a moderate-carb diet) and then adjust lower based on how you feel. “If you start paying attention to the carbs in your diet, you’ll eat fewer processed foods,” she says. And it’s those whole foods that are the basis of good health.

I used this recipe to make almond bark. I just spread out the chocolate on parchment paper and sprinkled chopped almonds on the top. After it hardened in the fridge I cut it into pieces and it was amazing!!! I was wondering if you have a white chocolate recipe. I have looked everywhere online and I found one that looked pretty good, but it was an epic fail. I was really wanting an awesome white chocolate recipe so I could make some sugar free Christmas candy.
While the above raw version is fantastic for using in no-bake treats or eating by the handful, if you want a version that you can bake with or that has the option of being oil-free, simply melt a bar of unsweetened chocolate and sweeten to taste with your favorite sweetener of choice. You can add a tsp oil for smoother results, but it’s not required. Pour into a parchment-lined container or candy molds, and freeze until firm. Then break into small pieces or pop out of the molds. This version needs no refrigeration and can be used anywhere you’d use store-bought chocolate chips.
Hi Sherri, You can still use the crust you made. You can try making the other layers thinner too, but they might be too thin. I would just make the other layers approximately the same as the original recipe by multiplying the amounts by 1 1/2. The easiest way is to enter 24 (instead of the default 16) for the number of servings on the recipe card, this will adjust the amounts of all the ingredients. Of course your bottom layer is already thinner, but it should still be good. I hope you like it!

And these homemade sugar free chocolate chips bake well too, I am pleased to say. I added them to some brownies, and I also baked them up in my Keto Double Chocolate Muffins. They held their shape nicely and didn’t  totally liquify and run all over the pan, as I feared they might. They certainly held up about as well as any bar of chopped dark chocolate I’ve ever used.

I’m on keto and found your recipe while on my search for homemade chocolate chips (tired of paying the high price for Lily’s). I haven’t tried it yet but I saw another recipe that suggested using silicone pot holders for molds for chocolate chips. Seems like an ingenious idea! Thanks Brenda for your feedback. I was not aware of the bitterness of stevia in relationship to how much or how little is used. I will keep that in mind next time I use the KAL brand. I usually use Sweetleaf but was out and had the KAL in the pantry. I too love dark chocolate so that was not the bitterness I was tasting. Next shopping trip I will get more Sweetleaf, and try the recipe again. Thanks for your help.
Chocolate is sold in chocolate bars, which come in dark chocolate, milk chocolate and white chocolate varieties. Some bars that are mostly chocolate have other ingredients blended into the chocolate, such as nuts, raisins or crisped rice. Chocolate is used as an ingredient in a huge variety of candy bars, which typically contain various confectionary ingredients (e.g., nougat, wafers, caramel, nuts, etc.) which are coated in chocolate.
Then don’t give up the fruit! Go for it. You sound like a fit and active person within the normal weight range. Generally the advice is to stay off excessive fruit, and high sugar fruit especially if people are overweight or have other health issues, then in that case fruit is not your friend. But with everything, eat within your personal carb limitations and eat to what is appropriate to you. Whole fruit is somewhat self limiting due to the fibre and water anyhow. You obviously have worked out a fabulous routine and it is working, so why change, stick with it Tom and enjoy 🙂
Hi Kristy, that is great that you have discovered us and you have a LCHF nutritionist on board. You are ahead of the game already! This will be an exciting time ahead for you as you will really learn so much about nutrition and your health. You will discover new ways to cook, which will eventually become your new favourites. You will lose weight and gain so much energy. You will also lose that constant feeling of guilt associated with eating, which is what I had. Eat too much, feel guilty, eat less, then overeat because you’re starving, feel guilty, and so the cycle continues. My weight has remained below my weight watchers goal for 2 years now without counting a single thing, how refreshing and healthy. You will gain control of your appetite and actually want to eat nutritious foods. Wheat and sugary foods no longer appeal (this is from me who used to buy 5kg bags of flour for my baking).
