That’s a great question and I’m sorry to say that I don’t have a scientific answer for you. I can only say this: When you add water to cocoa powder, you get a liquid or goo consistency, not a solid. I can only imagine – and this is just an educated guess, since I’m not a food scientist! – that that means that cocoa powder doesn’t have enough saturated fat to hold the chocolate together, so adding more, via coconut oil, provides the structure of the chocolates. Again, just a guess, but from decades of experience baking with cocoa powder, I can tell you that it alone is not a sufficient source of saturated fat to create the rich, solid mass we consider to be good chocolate. I’ll bet if you googled a little, you could find a more scientific answer! 🙂
Yay, another kiwi has discovered my website xxx I tend to shop mainly at New World and buy seeds, nuts, almond meal etc when they are discounted. The bulk bins are fine, but check the price per 100g, sometimes they are not as good value as regular packets that are “on special”. Hi Mel, Assuming that your ranch dressing doesn’t have sugar added, you don’t need to worry too much about limiting it, but within reason. This is my homemade ranch dressing recipe, which has 0.9g net carbs per 2-tbsp serving. It would be hard to find a store bought one with much less than that, even though some round anything less than 1g down to 0g, which isn’t truly accurate. Also, keep in mind that if weight loss is your goal, some people find that too much dairy can cause a stall. Finally, make sure you aren’t using all your “available” carbs on ranch dressing – have it with some low carb veggies!
Hi Stacey, I can’t give medical advice and definitely recommend following your doctor’s recommendations. You can ask him/her if low carb would be better suited for you. Also, you may want to double check with him/her if the kidney concern was related to high protein, because that is a common misconception about keto – it is not a high protein diet/lifestyle.

I keep using xylitol because we tolerate it well and it’s cheaper. Even though it does raise blood sugar levels, it is minimal so I figure it’s an ok compromise. I have melted down baking chocolate and sweetened it with xylitol but haven’t used it to bake because one recipe I read pointed out that it will melt and run all over the place but still have good flavor (in something like chocolate chip cookies). My kids don’t need any help making chocolate messy! Recently, I’ve been making coconut oil candies that I sweeten with a simple syrup made with xylitol. Since it’s made with cocoa powder it doesn’t seize. We can leave it out of the fridge for 10-15 mins before we need to chill it again. I’ve also mixed in shredded coconut and just poured it in a dish and cut it into squares or eaten it with a spoon at room temperature. That’s great for satisfying the need for a sweet treat but I love the idea of cocoa butter to firm up the chocolate so you can bake with it and eat it at room temperature. I think those benefits might make it easy to live with a little crunch from the sweetener. Going to order some cocoa butter now!

Then don’t give up the fruit! Go for it. You sound like a fit and active person within the normal weight range. Generally the advice is to stay off excessive fruit, and high sugar fruit especially if people are overweight or have other health issues, then in that case fruit is not your friend. But with everything, eat within your personal carb limitations and eat to what is appropriate to you. Whole fruit is somewhat self limiting due to the fibre and water anyhow. You obviously have worked out a fabulous routine and it is working, so why change, stick with it Tom and enjoy 🙂

Sometimes sunflower seed flour (which is basically finely ground sunflower seeds) can work as an almond flour replacement, but it depends on the recipe. Christy, I love this dessert and am so happy you liked it, too. I have found that the xanthan gum stabilizes the whipped cream enough to be good for about 5 days. It does make it stiff and it’s a little tricky smoothing it over the pudding layer. I just go slowly and gently. Just so you know, my recipe card has a recipe scale function. One of the main elements sugar adds to cookie recipes is, of course, sweetness. When you’re baking with sucralose or SITR, less is more, as they tend to be about twice as sweet as sugar. Sugar free cookie recipes for diabetics often contain far less sweetener than their full-sugar equivalents, and this is not a mistake.
