Thanks Brenda for your feedback. I was not aware of the bitterness of stevia in relationship to how much or how little is used. I will keep that in mind next time I use the KAL brand. I usually use Sweetleaf but was out and had the KAL in the pantry. I too love dark chocolate so that was not the bitterness I was tasting. Next shopping trip I will get more Sweetleaf, and try the recipe again. Thanks for your help.

Chocolate is generally stored away from other foods, as it can absorb different aromas. Ideally, chocolates are packed or wrapped, and placed in proper storage with the correct humidity and temperature. Additionally, chocolate is frequently stored in a dark place or protected from light by wrapping paper. The glossy shine, snap, aroma, texture, and taste of the chocolate can show the quality and if it was stored well.[75]
Sounds like perhaps your chocolate seized? Can’t say for sure but a few tips for next time: 1. Use good quality chocolate like Ghirardelli…don’t use Baker’s, as it tends to seize more easily. 2. Melt it double-boiler style, especially if you are using an electric range (it’s harder to control the heat with electric). Set a bowl over a pot with some barely simmering water. This takes longer but melts the ingredients more gently.

All I can say is I have had fun making two batches already! Thanks so much! Also a nice small snack when all I want is a little bit of chocolate, I just grab a few chips and am so happy! swerve is a great natural, zero-calorie replacement to sugar! You can try subbing it as a 1:1 for swerve, but coconut sugar varies in being a 1:1 in recipes – some it is and some it isn’t. Since recipes are only tested as written, I can’t tell you how it will turn out – I am so sorry and hope you understand! Take it from one who knows; hunger can really make sticking to a healthy diet difficult. I’m on keto and found your recipe while on my search for homemade chocolate chips (tired of paying the high price for Lily’s). I haven’t tried it yet but I saw another recipe that suggested using silicone pot holders for molds for chocolate chips. Seems like an ingenious idea! Good question. There is no doubt that grass fed, free range, organic is best but it is simply out of the price range of so many. What is more important to start with is to eat real whole food as best as you can find. I certainly don’t buy organic all the time. Do what you can when you can. It is more important to change from cereals to eggs rather then getting hung up on a perfect source of egg. Take a look at my food brands page. It needs updating as I change brands all the time as I find better ones, but is helpful. I really try and make this as easy on ourselves as we can. We shouldn’t need a degree in nutrition to eat well. Some sites complicate things far too much. My motto is “do the best you can as often as you can”. I agree, labels are pretty poor and not standardised (net vs total carbs for example). Good luck 🙂


That’s a great question, Tania, and unfortunately, the problem is also the solution. Saturated fat is, by definition, solid at room temperature (as opposed to unsaturated, which is liquid at room temp), so it is what makes the chocolate hold its shape. If you were to use another fat, you’d have to add some sort of stabilizers, either chemical (gross) or starch (which would make the chocolate taste more like a brownie, but with a really bad texture, and I wouldn’t recommend this). I have seen fiber, such as acacia or psyllium, used in commercial chocolate, but I have never tried it myself. So, unfortunately, coconut oil is your best bet in this case. It does have many health benefits, but I understand that it is not appropriate if you have to watch your saturated fat intake.
Unsweetened chocolate is pure chocolate liquor, also known as bitter or baking chocolate. It is unadulterated chocolate: the pure, ground, roasted chocolate beans impart a strong, deep chocolate flavor. It is typically used in baking or other products to which sugar and other ingredients are added. Raw chocolate, often referred to as raw cacao, is always dark and a minimum of 75% cacao.
In one study, which lasted six months, the low-carb diet seemed to win hands down. The people on it lost nearly 13 pounds (6 kg); the low-fat dieters shed just 4 pounds (2 kg). But the second study lasted six months longer, revealing a truth about low-carb diets: The results don’t last. This study too found that the low-carb dieters lost more weight in the first six months, but in the second half of the year, the weight came roaring back. By the end of a year, there was no significant difference in weight loss between the two groups. This weight “snapback” may be one reason that extremely low-carb diets have fallen out of favor.
Thanks so much for sharing all of your hard work with the world! My son recently started the Modified Atkins Diet for seizures. We’ve been told to keep his net carbs (total carbs minus fiber but not minus sugar alcohols) around 20-25/day, and he’s having a hard time giving up all of his beloved carbs, including chocolate. I was so excited to find this recipe! 1.8 net carbs is the perfect splurge! The first batch is in the fridge, but now I’m afraid to give it to him. From our count, it looks like each serving has almost 10 net grams of carbs, mostly from the Swerve (2 from unsweetened chocolate + 120 from Swerve + 11 from unsweetened cocoa = 133 net carbs, divided by 14). Please tell me I’m missing something … my son is salivating, and I’d love to let him have a treat! I’m new to all of this, so maybe there’s a reason I don’t have to worry. (I’ve seen Swerve in another recipe for patients on a related diet, the ketogenic diet, but I just don’t see how it’s safe if we can’t subtract sugar alcohols.) Thank you!

Yay, another kiwi has discovered my website xxx I tend to shop mainly at New World and buy seeds, nuts, almond meal etc when they are discounted. The bulk bins are fine, but check the price per 100g, sometimes they are not as good value as regular packets that are “on special”. I also buy my veggies form the fruit and veg shops when I am near them, I find the supermarkets to be incredibly overpriced generally. Good luck and enjoy all the new recipes here. 🙂

Jeni, I am SO SORRY! I had one other comment in the last month about the same thing. Two things that may have affected the dessert. 1. I got so much flack about the original pudding recipe having 1 Tbsp of cornstarch (or arrowroot) in it that I reduced the amount a few months ago. I have recently changed it back to the original quantity. 2. If the pudding isn’t cooked enough, it won’t set properly. So, unfortunately, you were a victim of one or both.
Unfortunately Ghirardelli has a facility with potential for cross contamination with nuts. (Chocolate is one of the trickiest foods for a nut allergy! So many cross contamination labels!) Guittard isn’t safe either. Thanks for the Scharffenberger recommendation- I emailed them to see. I’m hoping that since they’re a part of the Hershey company, that no warning label will mean good news. Hershey’s is fabulous about putting warnings on labels. (The only size Hershey bar that is safe is the regular size not jumbo or mini! But that’s not Keto and thus I’m learning to make chocolate from you!!) Thanks Carolyn! I’ll report back in!
