I know this post is old, but in the interest of helping others who may be reading this line of commentary I was wondering if your powdered erythritol was a Swerve brand or another brand? Swerve has oligosaccharides in it; so if it was another brand without the oligosaccharides, it could affect the end result. It would have been interesting to troubleshoot why your two batches ended up so different from each other back then too.
I also made sure to thoroughly sift both the powdered Swerve and cocoa powder before adding it to the melted chocolate mixture. This made a significant difference to the end result and the chips were much less grainy. To really sift out all the lumps, simply set a bowl below a fine mesh sieve. Measure your sweetener or cocoa powder into the bowl and use a spoon to stir it around and scrape it through the holes in the sieve.
These findings were true despite that reductions in body weight, waist circumference and other metabolic risk factors were not significantly different between the two diet groups. These findings suggest that satisfying lower-carb diets, which are higher in fat, can help beat heart disease factors just as well as diets that are harder to stick with and prone to leaving people hungry.

I started seeing a nutritionist, who has started me on a B-12 injection 2 times monthly, and a LCHF diet. He wants me to stay between 20-35 carbs daily for at least 3 months. He says I need to buy ketone strips, to make sure I don’t go into ketoacidosis, however, I am otherwise healthy, and not diabetic. Is this something I need to be overly concerned about? I’m on my 4th day of approx. 25 carbs daily, and other than a slight headache, I feel fine.
I personally don’t count anymore as I want this to be as easy and sustainable as possible. I have had years of counting calories and points, and this is incredibly liberating. I just don’t eat any sugars, grains or high carb foods any more so I am incredibly low carb all the time. When I was starting out I counted, just to see where my carbs were coming from and it was an eye opener. And yes you are correct, to go into ketosis anywhere between 20-50g carbs/day. I am wheat & dairy free for other allergy related conditions so find it hard to stick with the low carb diet. I simply cannot do any cream or milk products & tolerate small amounts of cheese. I find food very boring & then fall back on the gluten free junk. I have added coconut cream/ yoghurt & almond milk to smoothies with berries or a banana plus protein powder for breakfast. I know the banana not great but really miss real fruit. Frozen berries for most of the year not really doing it for me. Any ideas for snacks and treats that r still low carb so I don’t feel like a total ‘food leper’ my husband’s tongue in check explanation for me.

Back when I worked for a cooking school, I got spoiled by the super high quality chocolate that we used. It kills me to spend the amount of money for Lily’s, which is good chocolate, but not as good as the chocolate they used in the cooking school. They used Valhrona and Callebaut. I also like Godiva. Scharffenberger’s is pretty good, but not as good as it was before Hershey’s bought the company. I can’t wait to try this recipe with those super high quality chocolates. I haven’t done the math, but it likely means the chips won’t be much cheaper than Lily’s, but one thing I learned from the pro chefs is that high quality ingredients are worth the additional cost, so you should always spring for the highest quality you can afford.

Unfortunately Ghirardelli has a facility with potential for cross contamination with nuts. (Chocolate is one of the trickiest foods for a nut allergy! So many cross contamination labels!) Guittard isn’t safe either. Thanks for the Scharffenberger recommendation- I emailed them to see. I’m hoping that since they’re a part of the Hershey company, that no warning label will mean good news. Hershey’s is fabulous about putting warnings on labels. Maya, I made this and it’s AMAZING! In the crust, which I reduced to less than half (just to reduce overall carbs), I used some ground pecans, almond flour and hazelnut flour. oh MY! I don’t feel one ounce of guilt eating this and thanks to you and all your recipes, I’m SO NOT DEPRIVED. I’m a foodie so I love to cook. You have made my Keto way of life a huge pleasure. I’ve never used Kal sweetener for stevia and not sure how sweet or not sweet it is. I truly has seen just in using NuNaturals and Sweetleaf a big difference in sweetness. The bitterness would not be because too much was used, it is often that not enough is used. I’m sorry with all that happened but happy you could still salvage it. I’ve made the recipe twice since I’ve posted it and had no problems, but I like the taste of a dark chocolate. I will try it with a different brand of powdered stevia, I have one form Trader Joes I can try and will post the update.

Jeni, I am SO SORRY! I had one other comment in the last month about the same thing. Two things that may have affected the dessert. 1. I got so much flack about the original pudding recipe having 1 Tbsp of cornstarch (or arrowroot) in it that I reduced the amount a few months ago. I have recently changed it back to the original quantity. 2. If the pudding isn’t cooked enough, it won’t set properly. So, unfortunately, you were a victim of one or both.

As for chocolate made with erythritol, Wilbur Chocolate of Lititz, PA, once made a dark sugar-free chocolate called Apollo with a blend of erythritol, inulin, Ace-K and sucralose. It was good for chocolate enrobing and making chocolates. Unfortunately, it had a tendency to produce erythritol crystals when you used it in any recipe where the chocolate was blended with liquids containing water (as in making ganache with heavy cream).
Most vegetables are low- or moderate-carbohydrate foods (in some low-carbohydrate diets, fiber is excluded because it is not a nutritive carbohydrate). Some vegetables, such as potatoes, carrots, maize (corn) and rice are high in starch. Most low-carbohydrate diet plans accommodate vegetables such as broccoli, spinach, kale, lettuce, cucumbers, cauliflower, peppers and most green-leafy vegetables.[21]
