What a fabulous start you are making. There is no denying the change will take some time. I know as I have a fussy 7 yr old who even used to hate roast chicken, and last night he went back for thirds!!! or cauliflower rice (makes me a happy mumma). If your daughter loves fruit that is great, but try and get her onto the less sugary fruits and nutrient dense ones like berries and add some cream to keep her full. I am wheat & dairy free for other allergy related conditions so find it hard to stick with the low carb diet. I simply cannot do any cream or milk products & tolerate small amounts of cheese. I find food very boring & then fall back on the gluten free junk. I have added coconut cream/ yoghurt & almond milk to smoothies with berries or a banana plus protein powder for breakfast. I know the banana not great but really miss real fruit. Frozen berries for most of the year not really doing it for me. Any ideas for snacks and treats that r still low carb so I don’t feel like a total ‘food leper’ my husband’s tongue in check explanation for me.


Unfortunately Ghirardelli has a facility with potential for cross contamination with nuts. (Chocolate is one of the trickiest foods for a nut allergy! So many cross contamination labels!) I am targeting a 55 pound weight loss, and luckily my husband has jumped on board so I don’t have to be purchasing/cooking different things for him.
Then don’t give up the fruit! Go for it. You sound like a fit and active person within the normal weight range. Generally the advice is to stay off excessive fruit, and high sugar fruit especially if people are overweight or have other health issues, then in that case fruit is not your friend. But with everything, eat within your personal carb limitations and eat to what is appropriate to you. Whole fruit is somewhat self limiting due to the fibre and water anyhow. You obviously have worked out a fabulous routine and it is working, so why change, stick with it Tom and enjoy 🙂

Hi Mylene, my first question will be did you substitute any ingredient in the recipe? If the outside is cooking faster it probably means that the center of the tortillas was thicker in the center. Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! Hi Cyn, The numbers are general guidelines but will vary depending on many factors, such as activity level, insulin resistance, weight and more. There is no single magic number, just conventional recommendations that are a good starting point. I will have a macro calculator coming soon that will help determine what is best for each person, but even then it’s an approximation. The only way to know for sure is to test. If keto is your goal, it’s usually best to start lower and then see if you can stay in ketosis when increasing.

The problem is ” extra non- cocoa fats” are not allowed it the US and just 5% in the EU. The product with them can not then be called chocolate. Sharon also continues to claim without the requested support that “since big manufacturers are bulking up their alternative products with all kinds of questionable oils to replace the sugar.” Again that would not be allowed to be called chocolate. From what I’ve seen Sharon is more interested in propagating her own prejudices then providing the service of real information.

Read this post which may really explain how diabetics especially can be helped by lowering their carbs, how it may lower your insulin resistance and improve your control. Where you set your carb limits will depend on how high your current carb intake is and current medication. You may need to be seen by a diabetes educator, dietician or health professional as your need for medication may need to be reduced in conjunction with lowering your carbs. Ensure they are low carb friendly practitioners.

If you’re not in the US, the substance you call essence is what we call extract: it’s a liquid that is made from vanilla beans and alcohol. If that’s what you have, regardless of the name, go for it! The only adjustment I made to the recipe, was the addition of about a tablespoon of lemon juice to the cream cheese mixture; for just a little bit of tanginess to off-set all the sweetness. Hi, Amy. Yes, you can replace it – it is ground really fine and added to other ingredients. The coconut helps reduce the carbs a bit, but you can use more almond meal if you want. The texture will be a little different, but it should still taste good. Do yourself a favor and make the pastry cream a day or two before you assemble, so it’s nice and cold. Let the assembled dessert chill overnight. Use full fat ingredients. Another reader used a lactose free cream cheese and her dessert didn’t set, but she may not have cooked the pastry cream enough, too. I was trying to figure out why mine came out goopy and grainy. It hasnt solidified yet so i will see soon if i messed it up too much. When i was pouring my vanilla extract in it i goofed and over poured so at first i thought that would cause trouble, but figured it would be fine since i planned to just use however many splenda packets seemed necessary by tasting as i go. Then i thought hmm let me add 1/4 tsp of cinnamon and i thought that was the culprit, so i added a little more fairlife milk to help make it more liquid again…. but nope… and the flavor and consistency still wasnt where i wanted it so i added even more vanilla and milk afterf the powdered splenda…. thats when i noticed a bit of bubbling on the edges of the bowl and thought oh crud turn the heat down! I wonder if i should have added more oil but i didnt want to add extra oil and make it so it would never have a chance of solidifying.

Jeni, I am SO SORRY! I had one other comment in the last month about the same thing. Two things that may have affected the dessert. 1. I got so much flack about the original pudding recipe having 1 Tbsp of cornstarch (or arrowroot) in it that I reduced the amount a few months ago. I have recently changed it back to the original quantity. 2. If the pudding isn’t cooked enough, it won’t set properly. So, unfortunately, you were a victim of one or both.

Hi Cherie, you can use coconut milk. Some people have had problems with the chocolate layer setting up when the almond milk is mixed with it the next day. It’s usually because they didn’t cook the pudding long enough. If your pudding isn’t super thick and almost solid, then don’t add the extra milk. Hi Barb, That can definitely be it. Losing when you are close to goal can be more difficult. It could also be that your body’s healthy weight is a little higher than what you’d like – which doesn’t mean you can’t lose, but makes it more difficult. If just eating Keto foods isn’t working, double check the macros for your weight and see if the amount you’re eating needs to be adjusted. You’ll find more help and support in our support group here.
