I am trying to get back into keto. I did it before and I was so happy when I lost 10lbs (I did the keto for a month). I am ready to go back to this lifestyle. All this information is very helpful, I have written it all down so it can be easier for me to remember what is allowed and what is not. Looking forward to get back on this keto journey. Makers can sidestep this problem by being creative, without compromising on taste. However, consumers must be prepared to pay more for 100% cacao masses having no sugar but a great taste, because the part of product missing sugar is not “bulked up” with weird fillers, but it’s the whole raw material (cacao) that has likely taken more hours of experimentation and craftsmanship than usual from the producer to make it more than “acceptable” for the consumer.

Yes, but xylitol only takes a minuscule amount to be lethal to a dog. Plus, others who eat your baked goods might not know you used xylitol before sharing a bite with their canine friend, whereas it’s usually obvious if something contains chocolate. I’m with Jan. I won’t bake with xylitol and even try to avoid buying gum that contains it. (Which is increasingly difficult, by the way.)
This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)
No matter how you slice it, we eat too many carbohydrates. We consume many more calories than we used to, and most of those extra calories come from extra carbs (so many chips and cookies!). Thus, it makes sense to cut back some on carbs. It also makes sense to choose lower-GL carbohydrate foods instead of “fast-acting” carbs that send your blood sugar soaring. These strategies are a big part of the Magic Foods approach to eating.
Hi, My doctor strongly recommends staying away from erythritol. I notice that you use it in some of your reciepes. When I fist discovered it. It seemed too good to be true as it was so easy to bake without using sugar. Pure monk fruit which is very sweet without an aftertaste is just a powder and doesn’t have the benefits of bulk or granulation needed in baking. If anyone finds something great without erythritol, let us know.
Found these chocolate bars when they used to come thru Costco once a quarter. Wow they are good! I'm a milk chocolate fan, my hubby is a dark chocolate fan... they were cheaper there but worth it. With only 2 net carbs for the whole chocolate bar, it satisfies anyone who can't do the sugar. Many of the sugar free chocolate has a lower grade maltitol and it gives some unpleasant side effects if you eat too much, this candy does not. I went with the dark chocolate no flavor and it's $10 more (was for a bday so I went with the favorite), don't understand why that is...

I just have one question. How many of the chocolate chip molds does it take to use the entire batch of chocolate? 9? I topped your peanut butter cups with it (24 minis) and still filled the 3 molds I bought. This recipe makes some serious chocolate chips! It tastes wonderful, a true semi sweet chocolate chip taste. They are setting up as I type this and I will definitely have to store in the fridge since I live in the hot, humid south but I can’t wait to make low carb, keto friendly chocolate chip scones and cookies with them!

I wonder why you left out to mention the difference in quality of cacao beans. In my opinion only view are suitable to make a higher content bar. Bulk cacao beans can only be consumed by adding sugar and other ingredients to get a pleasant result. Big industry is build on mediocre ingredients to satisfy mass consumption and are limited this way. Compare a truck with a sports car makes no sense even though both are vehicles and can take you from A to B.

Jeni, I am SO SORRY! I had one other comment in the last month about the same thing. Two things that may have affected the dessert. 1. I got so much flack about the original pudding recipe having 1 Tbsp of cornstarch (or arrowroot) in it that I reduced the amount a few months ago. I have recently changed it back to the original quantity. 2. If the pudding isn’t cooked enough, it won’t set properly. So, unfortunately, you were a victim of one or both.
