In general, a low-carb diet focuses on proteins, including meat, poultry, fish and eggs, and some nonstarchy vegetables. While there are several good brands of sugar-free chocolate chips on the market, they can be prohibitively expensive. I love Lily’s chocolate chips but I find myself balking at $7.49 a bag. They also aren’t dairy-free and they contain a little soy, which many people don’t like. As a reader recently asked me about whether I had a decent homemade alternative, I decided I had to take matters into my own hands. I can honestly say that I have made vast strides in low carb cooking and baking in the past few years and very often my experiments lead me to new discoveries about how certain ingredients behave. I find myself storing up these little tidbits in my brain for future use. And when the time is right, a whole new idea takes shape in my brain and I can hardly wait to test it out.

Absolutely, Janae. You can use more of your favorite sweetener. I do want to mention that erythritol based sweeteners tend to crystallize in wetter recipes (puddings, lemon curd) and adding more may result in crystals forming and a little crunch here and there. Did you taste the mixture before you let it harden in the mold? If it was bitter to you before letting it harden, you needed more sweetener. For some getting used to stevia is a big transition. I use the vanilla liquid stevia by the brand Sweetleaf. I have tried Trader Joe’s vanilla stevia but I didn’t like it as much as Sweetleaf. Also different brands of liquid stevia are made differently and the way they are processed to form the liquid will produce different levels of sweetness. NuNaturals vanilla stevia is much sweeter than Sweetleaf. Don’t dump out your bottle but try other recipes with it and hopefully you can use it up and not feel you wasted your money on it. Use fat as a lever.  We’ve been taught to fear fat, but don’t! Both keto and low carb are high fat diets. Fat is our source of energy as well as satiety. The key to understand, though, is that fat is a lever on a low carb or keto diet. Carbs and protein stay constant, and fat is the one you increase or decrease (push the lever up or down) to gain or lose weight, respectively. So if your goal is weight loss, eat enough fat to be satisfied, but there’s no need to “get your fats in” once you’re satisfied.

If you’re not a fan of dark chocolate or need a dairy free option this candy bar is made with coconut butter, you can tell by the lighter color than the chocolate bars at the top of the post. This recipe is exactly the one I used for making my No Bake Chocolate Coconut Butter Bunnies last year for Easter! Just melt and pour into candy bar molds. I honestly don’t think it has a coconut flavor because the chocolate flavor is more prominent, but you can be the judge as this takes literally less than 5 minutes to make and 30 minutes or so to harden.

True dark chocolate products contain anywhere from 70 to 100 percent cacao, and the higher that number is, the richer and more bitter the chocolate will taste. I don’t know if this is the best, but she has this alernating with fresh meat. Since she has changed to this formulation, she has had no gingivitis (inflammation of her gums).
Yes, but xylitol only takes a minuscule amount to be lethal to a dog. Plus, others who eat your baked goods might not know you used xylitol before sharing a bite with their canine friend, whereas it’s usually obvious if something contains chocolate. I’m with Jan. I won’t bake with xylitol and even try to avoid buying gum that contains it. (Which is increasingly difficult, by the way.)

If someone wanted to cut the time then they could do like you suggested and make some of it the day before. Carolyn, I made this tonight I couldn’t find powdered swerve so I use the granulated version that I ran through my food processor. My first attempt was a glob of goo that was very gritty and unbelievably bitter. I decided to add more cocoa butter and melt the batch I made it came out very smooth and creamy but still really bitter. My question to you could I take my second batch and melt it in a double boiler and add additional sweeteners of some sort maybe stevia to come up with a less bitter chocolate?

Hi Jason. It depends on what your definition of healthy is. If it needs to be under 200 calories per serving then you will need to cut this dessert into smaller pieces. It is very rich and very filling so if you are serving it to kids, you could easily cut it into 24 pieces. My definition of “Healthy” is sugar-free and made from scratch with wholesome ingredients and little added chemicals. If your definition of healthy is low calorie and low fat, then this dessert is not for you. There are many recipes for Chocolate Lasagna or Chocolate Layered Dessert on-line which would meet your needs. You could make it very cheaply buy buying low fat cookies, cream cheese, low fat pudding and low fat coolwhip. As far as costing the dessert… I calculated the nutritional data in a recipe program but I did not cost it out. You will have to do that yourself depending on how you want to make the recipe. I cannot believe people still think you need to add sugar or gluten to make food delicious AND healthy! People, If you really want to lose weight, burn more calories than you eat, it’s that simple – eat gluten and sugar free! – I followed ‘Tim’s plan’ (http://paleorecipediet.com/paleo-recipes-diet/) which is made to do just that! My only problem is that it costs you commitment and discipline. But it gets easier from day-to-day.

I’m so excited about this recipe! It is hard to find gluten and sugar free in the same recipe sometimes. My only question is: Is there a way to make this dairy free as well? I’m trying to think of what would be a good dairy free substitute for Greek yogurt. I’ve seen some dairy free yogurts at the store, but they aren’t sugar free. I’m following a gluten/sugar free diet, but both my daughter and my son need dairy free, and if I made a cake, they would want to have some. As often as I make cakes and sweets for the rest of the family and I don’t get to eat them, it would just not work to make a cake that some of them couldn’t eat. Any suggestions for butterscotch pudding to make this with? We always made a half chocolate (on one side not mixed) and half butterscotch which was personal favorites with this combo. No idea where to begin making butterscotch pudding. Will have to research I suppose. BTW we call this Maxine for some reason through our families recipe of this. But I totally get better than sex too. It’s so yummy.

Well I remelted my chocolate and tweeked it a bit and I was happy with the results. Yesterday I made a batch of your chocolate chip cookies and I have to say they were so good, even my husband who would rather have dental work done over eating my low carb experiments said they were good.
