Btw, over the weekend I tried your waffles almond flour recipe and it was AWESOME. I had tried a few waffle recipes & finally found one I like but which took a lot more ingredients and a lot of complicated prep, plus had to be toasted. I found your waffles to be super easy and simple ingredients and the texture was awesome. They browned well on the outside with no toasting needed. LOVE it. Thought I had settled on a waffle recipe until I found yours. If I could only find one that uses either coconut flour only or a combination of almond & coconut which is not eggy, I’d be thrilled as I’m trying to decrease consumption of the almond flour for the inflammatory properties. 

But what’s really in it? 1 package of Oreo cookies, cream cheese, sugar, and Cool Whip. Just for the cookie layer it’s 24 carbs per serving. (That’s 36 cookies at 10.5 carbs each, divided by 16) But, I’m not going to break down the carbs in each layer of this tasty dessert. I just want to think about all of the weird stuff in the cookies, instant pudding and non-dairy whipped topping. Yuck! I shudder.

Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! Hi Priscilla, it’s actually difficult for me to remove the ingredients in my cookbook program to recalculate everything and then add it back. It’s not a very user friendly program. I suggest you use a food journal program like fatsecret.com and add all of the ingredients (minus those for the pastry cream) and see what you get. I’m sorry. One thing to consider when you're shopping for sugar-free dark chocolate is the percentage of cacao in your chocolate. True dark chocolate products contain anywhere from 70 to 100 percent cacao, and the higher that number is, the richer and more bitter the chocolate will taste. Luckily, most sugar-free dark chocolates are sweetened with stevia and other sugar alternatives that help offset the bitterness of a high percentage of cacao.

Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. Hi, My doctor strongly recommends staying away from erythritol. I notice that you use it in some of your reciepes. When I fist discovered it. It seemed too good to be true as it was so easy to bake without using sugar. Pure monk fruit which is very sweet without an aftertaste is just a powder and doesn’t have the benefits of bulk or granulation needed in baking. If anyone finds something great without erythritol, let us know.

Great questions Melissa. I think the gentle sweet is an erythritol and stevia blend and is granulated, correct? I would try using just a little less of the super sweet blend and taste after all of the ingredients have been added. If you need to, add as many doonks of powdered sweetener as you need. If you have the regular GS, use the same amount as specified in the recipe and then add 2-3 doonks, tasting as you go.

To be honest, I have not eaten every item in the box, and was hoping they would be so amazing that they would not have a chance to survive. Unfortunately, that just isn’t the case. First off, if you don't have diabetes, DON'T GET IT. It ruins EVERYTHING. Now, back to the stuff I can't eat. This "candy" is a wonderful idea for diabetic chocolates but for me, this particular item fell short. From what I've had so far, the Russell Stover sugar free is just a good, if not better. Our local grocery store has bulk sugar free chocolate which, to me, has a better, more realistic flavor. Don't get me wrong, I think the people at Diabeticfriendly provide a product that most diabetics would embrace with open arms. I'm just not one of them. The last candy I had from this box was a chocolate covered caramel. It was a real disappointment. The chocolate had a rather waxy taste and the caramel had a watered down flavor. I don't have any idea how you could possibly water down the taste of caramel but to me, it tasted that way to me.

Hi Gigi, Low carb and keto is about the balance of macronutrients eaten (fat, protein and carbs), not specifically meat or lack thereof. Most people on keto do eat meat, though some people do vegetarian keto. Fat is actually necessary for many body processes. There is no issue for the kidneys with a high fat diet, but if you eat too much protein that isn’t great for the kidneys. It’s a common misconception that keto is high protein (it isn’t). Keto is great for diabetics as it naturally helps stabilize insulin. I made this over the weekend and YUM! The only thing is that it didn’t set very well and I got more of a pudding consistency than anything. As soon as I cut into it it became a pudding/soup. It was still very good. I did use lactose free cream cheese and arrowroot powder…could that have been my downfall? Or did I not let things chill long enough. Hi Stephanie. I’m sorry the dessert did not set well. It could be one of three reasons. First, as you mentioned, it could have been the lactose free cream cheese. Having the dessert refrigerate overnight should have been perfect. The other reason may be because I updated the pudding recipe to have less cornstarch/ arrowroot because people kept complaining that they did not want to use it even though it resulted in a superior recipe. I would suggest adding 1/2 more teaspoons of arrowroot powder. And third, it may have been that the pudding was not cooked enough. It should be really thick after cooking and refrigerating before adding it to the layered dessert. I hope this helps. -Kim

And now that someone has come along and invented chocolate chip molds, we can even make them chocolate chip shaped! Wooohooo! Heretofore, I had always simply poured the chocolate mixture into chocolate bar molds and then chopped them, making them into low carb chocolate chunks rather than chips. I have also use these honeycomb silicon trivets, which work well and give them a very distinct shape. You can even simply pour the whole mixture into a parchment lined pan and chop them up from there. But obviously the chip mold is fun to have and they look just like the real thing.
Hi I’m new to Keto. I have been reading about it, and understanding what to eat and what not to eat. My problem is I’m not sure if I’m doing it correctly. I’m constantly hungry whereas information reads that I will never be hungry. I use fats as required along with topping up with vegetables in my meals yet this does not fill me up. I haven’t experienced the Keto flu and I’ve even put on weight! I have been doing this for about 3 weeks now. Any ideas where I am going wrong.
