Producers of high-quality, small-batch chocolate argue that mass production produces bad-quality chocolate.[49] Some mass-produced chocolate contains much less cocoa (as low as 7% in many cases), and fats other than cocoa butter. Vegetable oils and artificial vanilla flavor are often used in cheaper chocolate to mask poorly fermented and/or roasted beans.[49]
I used option 2 that does not call for the xanthan gum. The recipe called for “heavy cream” which I used. Should I have used “heavy whipping cream?” “Pecan meal” I used was “pecan chips” made by “Fisher”. Finally, the parchment paper seemed to disintegrate into the bottom layer of the dessert 🙁 please help! We love this dessert and want to nail it!

Make sure you're heating your cocoa butter slowly, microwaving in short increments and stirring in between, the cooling slowly as well. So let it come to room temp to solidify, then store in the fridge, rather then sticking the warm chocolate in the fridge or freezer to chill more quickly. This helps to prevent bloom, that dusty white layer than can develop on the outside of chocolate after condensation forms.
Net carbs is simply total carbs minus fiber and non-digestible sugar alcohols, like erythritol. (This doesn’t apply to high glycemic sugar alcohols, like maltitol.) I was trying to figure out why mine came out goopy and grainy. It hasnt solidified yet so i will see soon if i messed it up too much. When i was pouring my vanilla extract in it i goofed and over poured so at first i thought that would cause trouble, but figured it would be fine since i planned to just use however many splenda packets seemed necessary by tasting as i go. Then i thought hmm let me add 1/4 tsp of cinnamon and i thought that was the culprit, so i added a little more fairlife milk to help make it more liquid again…. but nope… and the flavor and consistency still wasnt where i wanted it so i added even more vanilla and milk afterf the powdered splenda…. thats when i noticed a bit of bubbling on the edges of the bowl and thought oh crud turn the heat down! I wonder if i should have added more oil but i didnt want to add extra oil and make it so it would never have a chance of solidifying.

I’m so glad I finally tried this recipe! I like Lily’s too, but they are expensive and the prebiotic inulin in them means I have to use them sparingly or I really suffer later. I even ordered the chip mold and some bar molds from Amazon! I can’t wait to try them, they should arrive today. This morning I made a batch using an 8×8 pan and I can’t wait to have some homemade chocolate for dessert.

The bulk bins are fine, but check the price per 100g, sometimes they are not as good value as regular packets that are “on special”. This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

Also, in the end, many people decided they didn’t want to go through life without ever eating pasta again. Let’s look at what would happen if you followed one of the more extreme low-carb diets.


The Centers for Disease Control and Prevention (CDC) recommend that adults do moderate exercise for 150 minutes a week for a minimum 10 minutes at a time for moderate health benefits. For optimal health benefits, the CDC recommend 300 minutes of exercise. The CDC also suggest that people lift weights or do other strength training exercises to improve overall health.
When preparing sugar free cookies for diabetics, your first priority is to eliminate as much of the sugar as you can from the recipe. But what to replace it with? One of the best options is sucralose, because it’s heat-stable, meaning it doesn’t lose sweetness when exposed to high baking temperatures. Interestingly, sucralose is made from sugar, but is not metabolized by the body like sugar is, which makes it a good choice in sugar free cookie recipes for diabetics. It’s available at a reasonable price in almost all supermarkets, in both store brands and under the brand label Splenda.
Chocolate may be a factor for heartburn in some people because one of its constituents, theobromine, may affect the esophageal sphincter muscle in a way that permits stomach acids to enter the esophagus.[76] Theobromine poisoning is an overdosage reaction to the bitter alkaloid, which happens more frequently in domestic animals than humans. However, daily intake of 50–100 g cocoa (0.8–1.5 g theobromine) by humans has been associated with sweating, trembling and severe headache.[77] Chocolate contains alkaloids such as theobromine and phenethylamine, which have physiological effects in humans, but the presence of theobromine renders it toxic to some animals, such as dogs and cats.[78]

The brand called KetoCaNa has the best taste in my experience for an individual product, though I now use a 50/50 blend of that plus another ketone salt preparation called Nutricost Ketone Salts, both available from Amazon.com. The blend tones down the acidity of the KetoCaNa product and provides the best overall taste to my palate. You won’t need it every day, only when you feel like you need appetite control.


A little cream would absolutely make it seize as unsweetened chocolate doesn’t like liquid. You can rescue seized chocolate with a little heat (on low) and the addition of even more liquid, 1 tbsp at a time, stirring constantly. But then it’s quite soft so it wouldn’t work for chocolate bars or chocolate chips. And hey, where do you get sunflower lecithin…I’d really like to try that!!!
Oh, by the way : We are prematurely killing our beloved pets with carbs. Dogs and especially cats need to eat meat, but commercial pet food is mostly corn & wheat, which was bad enough before being poisoned by weed killer (“Round-Up” which is soaked into all American grain today) …. Huge numbers of cats and dogs now suffer & die from kidney failure, and the only explanation is what we are feeding them. My kitties now get chicken and tuna, which is a lot cheaper than any ‘gourmet’ canned food. Cooking for them is kinda fun, for that matter.

Firstly read the “How to start” page which will cover how to start slowly and give up the most obvious places of sugar first, then cut back on all carbs such as bread, pasta, rice, starchy vegetables etc. You must also cut back on all seed oils such as canola, sunflower, margarine, spreads etc. These cause inflammation. Go back to healthy fats such as olive oil, butter, coconut oil, etc. Take a look at the lists on the page. To make your own meal plan, take a look at all my breakfast, lunch and dinner recipes. My daughter and I are going to give this a go! I did a stint of Whole30 last year which is much more restrictive (no dairy, no sugar, no peanuts, soy, grains…a lot of no fun), and I don’t think I can do that again. Though, to its credit, those 30 days did teach me that sugar hides EVERYWHERE–in meat, jarred spaghetti sauce, deli meats…it’s crazy! And it does have an effect on your ability to taste “real food”!

I finally got the time and mind set to make this dessert, I have been wanting to do it for so long now but felt a bit intimidated by it. I will say right now that I shouldn’t have been, it went very smoothly and I did all the layers in 1 hr. and 10 min. time :) I did bake the crust and let it cool on the counter for about 15 min. then stuck it in my freezer while the pudding was in the fridge cooling. All the layers are put together and it is sitting in my fridge just waiting for me to dig in. Can I just skip supper tonight and eat this instead!?!?! Cacao pods are harvested by cutting them from the tree using a machete, or by knocking them off the tree using a stick. The beans with their surrounding pulp are removed from the pods and placed in piles or bins, allowing access to micro-organisms so fermentation of the pectin-containing material can begin. Yeasts produce ethanol, lactic acid bacteria produce lactic acid, and acetic acid bacteria produce acetic acid. The fermentation process, which takes up to seven days, also produces several flavor precursors, eventually resulting in the familiar chocolate taste.[53]
Chocolate is generally stored away from other foods, as it can absorb different aromas. Ideally, chocolates are packed or wrapped, and placed in proper storage with the correct humidity and temperature. Additionally, chocolate is frequently stored in a dark place or protected from light by wrapping paper. The glossy shine, snap, aroma, texture, and taste of the chocolate can show the quality and if it was stored well.[75]
It’s very difficult to use stevia alone without a little bitter aftertaste. Adding a small amount of powdered erythritol or monk fruit can really help get a sweeter taste. For milk chocolate, I prefer using a powdered milk as liquids can ruin the chocolate so I’m not sure how to go about using almond milk. You could try adding a teaspoon at a time and go from there.
