I’ve made chocolate bars with your recipe quite a few times, and ever took one on a 20 hour round trip car ride to see my daughter for Christmas! I’ve never had a problem with the texture that he’s talking about either! I can tell some times when I make a large batch like 2-3 times your recipe that the sweetener tends to settle in the bars! Even after I’ve powdered and sifted it! Which is actually what I’m researching now, what temp it actually melts at! I love your recipe as is! It is great! You are also right about there being a huge need for sugar free chocolate chips! I’ve only found one on Amazon and its pricy and I’m not to sure about it! Sounds like perhaps your chocolate seized? Can’t say for sure but a few tips for next time: 1. Use good quality chocolate like Ghirardelli…don’t use Baker’s, as it tends to seize more easily. 2. Melt it double-boiler style, especially if you are using an electric range (it’s harder to control the heat with electric). Set a bowl over a pot with some barely simmering water. This takes longer but melts the ingredients more gently.

Make sure you're heating your cocoa butter slowly, microwaving in short increments and stirring in between, the cooling slowly as well. So let it come to room temp to solidify, then store in the fridge, rather then sticking the warm chocolate in the fridge or freezer to chill more quickly. This helps to prevent bloom, that dusty white layer than can develop on the outside of chocolate after condensation forms.

The base of this recipe is cacao butter (also known as cocoa butter), which is a creamy fat that is solid at room temperature. It may be available at a health food store, but I get mine on Amazon. If you can’t find cacao butter, you can use coconut oil. However, if you do use oil, you must keep the chocolates chilled, even once they are set. Coconut oil will be too soft at room temperature.

If you can't have candy with real sugar then these are passable, but not much better, if at all, than say a Hershey sugar-free dark chocolate. Dark chocolate is usually more dense (so not soft, right?) and not as sweet as milk chocolate. These need a firm bite and the overall taste is just ok (but at least there is no chemical after taste as with some sugar free stuff), but they served the purpose. It sounds like you got lucky with the tempering. Years back I got into making chocolates and went a little nuts. I made sugar-free and regular chocolates — hand dipped and molded. Tempering became second nature. I melted chocolate with the microwave and tempered over a bowl of warm water to maintain the right temp until I could add in my “seed” chocolate to temper. In this case you’d be using finely chopped cocoa butter to seed. Doesn’t take much time to do, as long as you have a good digital thermometer.
