I finally got the time and mind set to make this dessert, I have been wanting to do it for so long now but felt a bit intimidated by it. I will say right now that I shouldn’t have been, it went very smoothly and I did all the layers in 1 hr. and 10 min. time :) I did bake the crust and let it cool on the counter for about 15 min. then stuck it in my freezer while the pudding was in the fridge cooling. All the layers are put together and it is sitting in my fridge just waiting for me to dig in. Can I just skip supper tonight and eat this instead!?!?! I know it will taste delicious because all the layers on their own are delicious. Thank you for all your recipes!!
I personally don’t count anymore as I want this to be as easy and sustainable as possible. I have had years of counting calories and points, and this is incredibly liberating. I just don’t eat any sugars, grains or high carb foods any more so I am incredibly low carb all the time. When I was starting out I counted, just to see where my carbs were coming from and it was an eye opener. And yes you are correct, to go into ketosis anywhere between 20-50g carbs/day. I used option 2 that does not call for the xanthan gum. The recipe called for “heavy cream” which I used. Should I have used “heavy whipping cream?” “Pecan meal” I used was “pecan chips” made by “Fisher”. Hi Tara. You are not missing anything, as I subtract erythritol. I don’t subtract all sugar alcohols because some do affect blood sugar. But erythritol is well studied and found typically not to. Most people do subtract erythritol because of this but since your son has such a specific issue, I honestly cannot give you advice with this, it’s too serious. That said, I do have another reader who’s sone suffers seizures and they do follow the keto diet and I know she makes him things with erythritol (Swerve). From the sounds of it, you ARE already following a keto diet if he’s that low in carbs. But again, I do not feel comfortable giving you any advice with regards to this except perhaps to say that you should investigate the reasoning behind NOT subtracting the erythritol on the diet your son is on. good luck and I am so sorry. I wish I could help more.

I couldn’t find unsweetened chocolate in Australia so I added more cocoa butter and cocoa powder (1 oz of each). Delicious! I’ve never used Kal sweetener for stevia and not sure how sweet or not sweet it is. I truly has seen just in using NuNaturals and Sweetleaf a big difference in sweetness. The bitterness would not be because too much was used, it is often that not enough is used. I’m sorry with all that happened but happy you could still salvage it. I’ve made the recipe twice since I’ve posted it and had no problems, but I like the taste of a dark chocolate. I will try it with a different brand of powdered stevia, I have one form Trader Joes I can try and will post the update.
Is there a way to make the sweetness of chip recipe comparable to the Lily dark chocolate? I’m very new to the low carb world and the use of sugar alternatives. The base of this recipe is cacao butter (also known as cocoa butter), which is a creamy fat that is solid at room temperature. It may be available at a health food store, but I get mine on Amazon. If you can't find cacao butter, you can use coconut oil. However, if you do use oil, you must keep the chocolates chilled, even once they are set. Coconut oil will be too soft at room temperature.  

Hi Libby. Re foods to eat. Still a newbie and exploring all this. Re the foods for example cocnut cream- is there a specific brand or type you,should buy? Same with butter and meats- re grass fed versus grain fed. Coconut oil- is there ones you should or shouldn’t use brand wise. Lchf site says grass fed meat and butter. Does it have to say organic on the butter. Labelling is really bad in regards to this. And your cheeses- re Brie for,example- are they all they same or are there certain ones of them you have to buy ? swerve is a great natural, zero-calorie replacement to sugar! You can try subbing it as a 1:1 for swerve, but coconut sugar varies in being a 1:1 in recipes – some it is and some it isn’t. Since recipes are only tested as written, I can’t tell you how it will turn out – I am so sorry and hope you understand! I THINK it will work, however I do think it will be less sweet, so you may need to use more. Let me know if you try!

Had I not read your sugar free post I would’ve just kept on living my regular sugar-filled life. I didn’t go 100% sugar free but was very aware of everything sweet that I put in my mouth. I was super surprised at how easily my sugar cravings disappeared! I guess they were habits and not cravings? I think I only had one pop (hello from North Dakota!) all month and could barely finish it. I too couldn’t believe how sweet fruit tastes. I started ending my meal with fruit and soon realized I didn’t need the desserts I was packing in my lunch. Thank you for an eye opening experience. And that kale Caesar salad? To die for!

Carbohydrate-restricted diets can be as effective, or marginally more effective, than low-fat diets in helping achieve weight loss in the short term.[6] In the long term, effective weight maintenance depends on calorie restriction, not the ratio of macronutrients in a diet.[7] The hypothesis proposed by diet advocates that carbohydrate causes undue fat accumulation via the medium of insulin, and that low-carbohydrate diets have a "metabolic advantage", has been falsified by experiment.[8][6]
It’s not recommended because this chocolate doesn’t contain any of the stabilizers that commercial chocolate and chocolate chips use to hold their shape under high heat. If you want to use it, I’d recommend chopping it up, then freezing it solid first. Add it to the batter at the last possible minute before baking, and don’t use it in any cookie that bakes more than about 10 minutes. Sorry it’s kind of a high maintenance method! It’s easy to achieve the same effect when making sugar free cookie recipes for diabetics by coating your cookies with something which will brown in the oven. One very easy way is to lightly spray your cookies with cooking spray just before placing them in the oven. Another way is to brush them with a little milk or whipped egg white just before you bake them. Egg white, in particular, adds gloss as well as browning.
Hi Silvy, these are quite common concerns when starting out low carb. By increasing your healthy fats you will feel full and satiated for longer, than quick burning carbs. You will also reap all the health benefits from lowering your carbs, eating good quality protein and increasing your fats from healthy sources. It may take a while for your appetite to adapt to be running on more fat than carbs, but it is so incredibly wonderful to finally be off the high/low sugar roller coaster. Hi Jason. It depends on what your definition of healthy is. If it needs to be under 200 calories per serving then you will need to cut this dessert into smaller pieces. It is very rich and very filling so if you are serving it to kids, you could easily cut it into 24 pieces. My definition of “Healthy” is sugar-free and made from scratch with wholesome ingredients and little added chemicals. If your definition of healthy is low calorie and low fat, then this dessert is not for you. There are many recipes for Chocolate Lasagna or Chocolate Layered Dessert on-line which would meet your needs. You could make it very cheaply buy buying low fat cookies, cream cheese, low fat pudding and low fat coolwhip. As far as costing the dessert… I calculated the nutritional data in a recipe program but I did not cost it out. You will have to do that yourself depending on how you want to make the recipe.
