This was “out of this world” amazing! Even my family members that don’t like low carb alternatives (and hate sugar substitutes) really liked this dessert. I added 5 tablespoons of natural peanut butter to the cream cheese layer and it turned out great (I may experiment with different amounts of peanut butter to get the best ratio to taste just right)
The new study is unique in part because of its size and rigor. It is among the largest and most expensive feeding trials ever conducted on the subject. The researchers recruited 164 adults and fed them all of their daily meals and snacks for 20 weeks, while closely tracking their body weight and a number of biological measures. The trial cost $12 million and was supported largely by a grant from the Nutrition Science Initiative, a nonprofit research group co-founded by Gary Taubes, a science and health journalist and proponent of low-carbohydrate diets. The study was also supported by funding from the New Balance Foundation, the National Institutes of Health and others.

Chocolate bloom is caused by storage temperature fluctuating or exceeding 24 °C (75 °F), while sugar bloom is caused by temperature below 15 °C (59 °F) or excess humidity. To distinguish between different types of bloom, one can rub the surface of the chocolate lightly, and if the bloom disappears, it is fat bloom. Moving chocolate between temperature extremes, can result in an oily texture. Although visually unappealing, chocolate suffering from bloom is safe for consumption and taste unaffected.[71][72][73] Bloom can be reversed by retempering the chocolate or using it for any use that requires melting the chocolate.[74]
In the early 1900s Frederick Madison Allen developed a highly restrictive short term regime which was described by Walter R. Steiner at the 1916 annual convention of the Connecticut State Medical Society as The Starvation Treatment of Diabetes Mellitus.[48]:176–177[49][50][51] People showing very high urine glucose levels were confined to bed and restricted to an unlimited supply of water, coffee, tea, and clear meat broth until their urine was "sugar free"; this took two to four days but sometimes up to eight.[48]:177 After the person's urine was sugar-free food was re-introduced; first only vegetables with less than 5g of carbohydate per day, eventually adding fruits and grains to build up to 3g of carbohydrate per kilogram of body weight. Then eggs and meat were added, building up to 1g of protein/kg of body weight per day, then fat was added to the point where the person stopped losing weight or a maximum of 40 calories of fat per kilogram per day was reached. The process was halted if sugar appeared in the person's urine.[48]:177–178 This diet was often administered in a hospital in order to better ensure compliance and safety.[48]:179

NOTE: I’m a little nervous about the super sweet blend. I’m imagining that extra stevia has been added to bump up the sweetness. When stevia is added to chocolate, it can increase the bitter flavor compounds in both the chocolate and the stevia. Go slowly and taste as you go. Many THMs have made this recipe and I haven’t heard a complaint yet. Please let me know if you used the GSSS and how it worked. Have a great day. -Kim

Hi Kristy, that is great that you have discovered us and you have a LCHF nutritionist on board. You are ahead of the game already! This will be an exciting time ahead for you as you will really learn so much about nutrition and your health. You will discover new ways to cook, which will eventually become your new favourites. You will lose weight and gain so much energy. You will also lose that constant feeling of guilt associated with eating, which is what I had. Eat too much, feel guilty, eat less, then overeat because you’re starving, feel guilty, and so the cycle continues. My weight has remained below my weight watchers goal for 2 years now without counting a single thing, how refreshing and healthy. You will gain control of your appetite and actually want to eat nutritious foods. Wheat and sugary foods no longer appeal (this is from me who used to buy 5kg bags of flour for my baking).
Otherwise, if you can’t find erythritol, I’d probably go with something like Truvia Spoonable. That’s actually a combination of erythritol and stevia, but more common in stores. If you use that, you’d probably need about 2 1/2 teaspoons for the crust, 1 tablespoon + 2 teaspoons for the cream cheese layer, 3 1/2 tablespoons for the pudding layer, and 2 1/2 tablespoons for the whipped cream layer. I’d still grind it for finer consistency if you can.
That said, you don’t have to jump in with both feet. Schmidt recommends trying to eat under 200 g of carbs a day initially (a moderate-carb diet) and then adjust lower based on how you feel. “If you start paying attention to the carbs in your diet, you’ll eat fewer processed foods,” she says. And it’s those whole foods that are the basis of good health.
Hi Stephanie. First, if the chocolate pudding isn’t SUPER thick tomorrow after it sets, then don’t add the almond milk. Keep it as is. You can use a mini food processor, large food processor or even a blender (this will be a slower process) instead of a coffee grinder. BTW, I use my coffee grinder for spices, nuts, seeds, and coconut all of the time. It has been more than worth it’s price and I’ve had it for at least 15 years. If you don’t have any of these appliances, you can chop finely by hand. The texture will be a little more coarse, but should be fine. Let me know if you have any more questions. If you need my text number, let me know on my Facebook page. Have a great day. -Kim
While the above raw version is fantastic for using in no-bake treats or eating by the handful, if you want a version that you can bake with or that has the option of being oil-free, simply melt a bar of unsweetened chocolate and sweeten to taste with your favorite sweetener of choice. You can add a tsp oil for smoother results, but it’s not required. Pour into a parchment-lined container or candy molds, and freeze until firm. Then break into small pieces or pop out of the molds. This version needs no refrigeration and can be used anywhere you’d use store-bought chocolate chips.
Dr. Ludwig emphasized that the results need to be replicated by other investigators and he stressed that the findings do not impugn whole fruits, beans and other unprocessed carbohydrates. Rather, he said, the study suggests that reducing foods with added sugar, flour and other refined carbohydrates could help people maintain weight loss by increasing their metabolisms at a lower body weight.
No matter how you slice it, we eat too many carbohydrates. We consume many more calories than we used to, and most of those extra calories come from extra carbs (so many chips and cookies!). Thus, it makes sense to cut back some on carbs. It also makes sense to choose lower-GL carbohydrate foods instead of “fast-acting” carbs that send your blood sugar soaring. These strategies are a big part of the Magic Foods approach to eating.

Hi Tara. You are not missing anything, as I subtract erythritol. I don’t subtract all sugar alcohols because some do affect blood sugar. But erythritol is well studied and found typically not to. Most people do subtract erythritol because of this but since your son has such a specific issue, I honestly cannot give you advice with this, it’s too serious. That said, I do have another reader who’s sone suffers seizures and they do follow the keto diet and I know she makes him things with erythritol (Swerve). From the sounds of it, you ARE already following a keto diet if he’s that low in carbs. But again, I do not feel comfortable giving you any advice with regards to this except perhaps to say that you should investigate the reasoning behind NOT subtracting the erythritol on the diet your son is on. good luck and I am so sorry. I wish I could help more.

Low-carb diets, especially very low-carb diets, may lead to greater short-term weight loss than do low-fat diets. But most studies have found that at 12 or 24 months, the benefits of a low-carb diet are not very large. A 2015 review found that higher protein, low-carbohydrate diets may offer a slight advantage in terms of weight loss and loss of fat mass compared with a normal protein diet.
Now if you're thinking you'll just handle the problem by brushing and flossing a little more often, guess again. Since the breath odor is coming from metabolic changes and not necessarily a dental-related condition, traditional breath products are not likely to provide long-lasting relief. On the other hand drinking more water intake can do the trick.
Not sure if it would make a difference here, but a technique I learned making candies is to melt your chocolate on a heating pad (I use a ziplock to contain it), which doesn’t break the temper. That way you can coat candies without getting a hard/sweaty result) Just one of those ten dollar cheapos from walgreens. You can get a ‘cheap’ tempering vat thingy from king arthur, but they run about 200 bucks so you’d have to be really committed!
Low-carb diets usually begin with an “induction” phase that eliminates nearly every source of carbohydrate. Often, you’ll consume as few as 20 grams of carbohydrate a day. That’s less than 100 calories’ worth—about what’s in a small dinner roll. On a 1,200-calorie diet, that’s only about 8 percent of your daily calories. By contrast, health experts recommend that we get between 45 and 65 percent of our calories from carbs.
The new face of Sugar Free! Now with stevia extract! Hi Lil. I sent you an email last night but in case you didn’t get it I’ll answer here, too. Eryhtritol is a sugar alcohol (having both properties of sugar and alcohol in its chemical structure) which tastes very much like sugar but is about 60 -70% the sweetness of sugar. It is not absorbed by the body therefore it has zero calories and does not affect blood sugar. It undergoes an endothermic reaction when it melts, creating a cool sensation which is especially nice in frozen desserts. It has become a staple ingredient for low carb bloggers and bakers. Google erythritol. It can be purchased as crystals like sugar or blended with other ingredients like stevia, monk fruit or chicory root – Truvia is a brand that comes to mind. Can you find the Sukrin line of sugar-free products or Swerve? Either will work nicely. Please let me know if I can provide anymore information. Thanks for your question. Have a nice week! -Kim
But what’s really in it? 1 package of Oreo cookies, cream cheese, sugar, and Cool Whip. Just for the cookie layer it’s 24 carbs per serving. (That’s 36 cookies at 10.5 carbs each, divided by 16) But, I’m not going to break down the carbs in each layer of this tasty dessert. I just want to think about all of the weird stuff in the cookies, instant pudding and non-dairy whipped topping. Yuck! I shudder.

Weekends can be difficult if you are surrounded by others not eating this way, or eating out. Take little bags of nuts with you, cubes of cheese, slices of deli meat, squares of dark chocolate or go for creamy coffees, they tend to keep me full for hours. When eating out, go for simple dishes such as steak and blue cheese with veggies, salads but no croutons, think meat’n’veg and no sauces is an easy way to continue when out. Some cafes sell frittatas with no pastry, quiche, etc. Even if you buy a huge meat and salad wrap then deconstruct it and eat the filling is another good option. Once you start getting the idea, you can adapt most things. Good luck Shireen 🙂
I am grateful for stumbling upon this website…I think my biggest challenge will be removing my favorite International Delight Coffee creamer from my daily cup of coffee…I can do that gradually. I am glad that you stress “STRIVE FOR IMPROVEMENT, NOT PERFECTION”…that’s real life. I do have weight loss goals but my main goal is to avoid Type 2 diabetes. Thankfully I have been working out regularly since the beginning of the year. Again many thanks I will be visiting your site often. God Bless you!
To do the new study, Dr. Ludwig and his colleagues collaborated with Framingham State University, about 20 miles outside Boston, where they recruited overweight students, staff members and faculty members. Each participant went through two phases of the study. First, they were put on strict diets that lowered their body weight by about 12 percent, which was designed to stress their metabolisms.

New processes that sped the production of chocolate emerged early in the Industrial Revolution. In 1815, Dutch chemist Coenraad van Houten introduced alkaline salts to chocolate, which reduced its bitterness.[14] A few years thereafter, in 1828, he created a press to remove about half the natural fat (cocoa butter or cacao butter) from chocolate liquor, which made chocolate both cheaper to produce and more consistent in quality. This innovation introduced the modern era of chocolate.[20]
Dr. Hall published a meta-analysis of feeding studies last year that suggested that energy expenditure was actually slightly greater on low-fat diets. But Dr. Ludwig pointed out that those studies were very short, with none lasting longer than a month and most lasting a week or less. He said the process of adapting to a low-carb diet can take a month or longer.
The problem is ” extra non- cocoa fats” are not allowed it the US and just 5% in the EU. The product with them can not then be called chocolate. Sharon also continues to claim without the requested support that “since big manufacturers are bulking up their alternative products with all kinds of questionable oils to replace the sugar.” Again that would not be allowed to be called chocolate. From what I’ve seen Sharon is more interested in propagating her own prejudices then providing the service of real information.
The researchers tracked biomarkers that helped them ensure that the participants stuck to their diets. They also worked with a large food service company, Sodexo, to prepare thousands of generally healthful meals that the subjects could eat in cafeterias or take home with them. A typical meal for the high-carb group might consist of a chicken burrito bowl with rice and vegetables, for example, or roasted turkey with green beans and mashed potatoes. The low-carb group would get a similar meal with fewer carbohydrates, like a chicken burrito lettuce wrap or roasted turkey with green beans and mashed cauliflower.

The difference from other low-carb diets is that you’re going to swap saturated fats for unsaturated fats — a plus if you have type 2 diabetes, which leaves you more at risk for heart disease, or if you have a personal or family history of heart disease yourself. That means rather than butter, cheese, and cream, you’re eating olive oil, fatty fish, nuts, seeds, and avocado as your main sources of fat.

When picking out gifts for the special people in our lives, sometimes we are limited to diabetic candy. But just because it is diabetic chocolate, it doesn't have to be bland or lacking in flavor. Introduce them to the delicious world of GODIVA's sugar free chocolate and bring new joy to their life. But make sure to explain to them that the chocolate is in fact sugar free so they are not fooled by the deliciously rich flavor of the treats you give them. Once they realize that they can have this tasty chocolate without breaking their diet, they will be forever grateful to you.
