Hi, My doctor strongly recommends staying away from erythritol. I notice that you use it in some of your reciepes. When I fist discovered it. It seemed too good to be true as it was so easy to bake without using sugar. Pure monk fruit which is very sweet without an aftertaste is just a powder and doesn’t have the benefits of bulk or granulation needed in baking. If anyone finds something great without erythritol, let us know.
Great questions Melissa. I think the gentle sweet is an erythritol and stevia blend and is granulated, correct? I would try using just a little less of the super sweet blend and taste after all of the ingredients have been added. If you need to, add as many doonks of powdered sweetener as you need. If you have the regular GS, use the same amount as specified in the recipe and then add 2-3 doonks, tasting as you go.

This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

As for chocolate made with erythritol, Wilbur Chocolate of Lititz, PA, once made a dark sugar-free chocolate called Apollo with a blend of erythritol, inulin, Ace-K and sucralose. It was good for chocolate enrobing and making chocolates. Unfortunately, it had a tendency to produce erythritol crystals when you used it in any recipe where the chocolate was blended with liquids containing water (as in making ganache with heavy cream).

Yes, but xylitol only takes a minuscule amount to be lethal to a dog. Plus, others who eat your baked goods might not know you used xylitol before sharing a bite with their canine friend, whereas it’s usually obvious if something contains chocolate. I’m with Jan. I won’t bake with xylitol and even try to avoid buying gum that contains it. (Which is increasingly difficult, by the way.)

The best way to start eating a lower-carb diet is to simply focus on eliminating major sources of added sugar and carbohydrates — especially from sugar snacks, sweetened drinks, grains and possibly legumes and dairy, too. Well I remelted my chocolate and tweeked it a bit and I was happy with the results. The American Academy of Family Physicians defines low-carbohydrate diets as diets that restrict carbohydrate intake to 20 to 60 grams per day, typically less than 20% of caloric intake.[2] A 2016 review of low-carbohydrate diets classified diets with 50g of carbohydrate per day (less than 10% of total calories) as "very low" and diets with 40% of calories from carbohydrates as "mild" low-carbohydrate diets.[18] In a 2015 review Richard D. Feinman and colleagues proposed that a very low carbohydrate diet had less that 10% caloric intake from carbohydrate, a low carbohydrate diet less than 26%, a medium carbohydrate diet less than 45%, and a high carbohydrate diet more than 45%.[16]

In addition to diabetics, there are a growing number of people who are pre-diabetic, insulin resistant and reactive hypoglycemic who really need to restrict sugar intake. I’ve also read that sugar as well as salt make contribute to high blood pressure and cancer. Let’s agree that sugar isn’t too good for us, and that, even we who love chocolate, need to keep it to a minimum. So far, sugar substitutes are not a satisfactory solution for a number of reasons, not the least of which is poor flavor. Perhaps, that’s because most big chocolate makers aren’t paying enough attention to fine flavor cacao. Rather, the approach is to use commodity chocolate and throw in anything that will sweeten it. That’s why the only ones who can lead us to a solution are our craft chocolate makers, because it’s all about the flavor. There a a few excellent 100% bars out there–including Fruition’s–but most are not palatable enough for the average consumer. Still, we should encourage more people to try 80% +, because if you’re only consuming 1-2 squares a day, you’re probably not getting enough sugar for it to be concerning. You’ll notice that ‘s a small portion of chocolate. True! It’s less than the portion size described on most labels. But it’s my opinion that if you’re truly savoring those 1or 2 squares slowly, truly tasting and enjoying them, it should be enough. At least, it is for me. You can still lose weight consuming that amount, too. So maybe the underlying problem is actually mindless consumption.
