Oh, by the way : We are prematurely killing our beloved pets with carbs. Dogs and especially cats need to eat meat, but commercial pet food is mostly corn & wheat, which was bad enough before being poisoned by weed killer (“Round-Up” which is soaked into all American grain today) …. Huge numbers of cats and dogs now suffer & die from kidney failure, and the only explanation is what we are feeding them. My kitties now get chicken and tuna, which is a lot cheaper than any ‘gourmet’ canned food. Cooking for them is kinda fun, for that matter.

I’m sorry the pastry cream has proven pesky, Douglass. Sometimes it takes “taking it too far” and scrambling the eggs to see how much cooking the mixture can take to thicken. This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

I just found your website and the recipes seem great! I just tried the chocolate candy bar recipe as I am craving treats so badly and can’t have them. However, I found the final product to be quite bitter. Did I do something wrong? Are there any parts I might change? I used almond milk. Did you taste the mixture before you let it harden in the mold? If it was bitter to you before letting it harden, you needed more sweetener. For some getting used to stevia is a big transition. I use the vanilla liquid stevia by the brand Sweetleaf. I have tried Trader Joe’s vanilla stevia but I didn’t like it as much as Sweetleaf. Also different brands of liquid stevia are made differently and the way they are processed to form the liquid will produce different levels of sweetness. NuNaturals vanilla stevia is much sweeter than Sweetleaf. Don’t dump out your bottle but try other recipes with it and hopefully you can use it up and not feel you wasted your money on it. I’m sorry you didn’t like the recipe.

For many people, when trying to lose weight, the answer seems obvious: eat less. Less food means fewer calories, which in turn means less weight, right? But that's not always true. It kills me to spend the amount of money for Lily’s, which is good chocolate, but not as good as the chocolate they used in the cooking school. They used Valhrona and Callebaut. I also like Godiva. Scharffenberger’s is pretty good, but not as good as it was before Hershey’s bought the company. I can’t wait to try this recipe with those super high quality chocolates. I haven’t done the math, but it likely means the chips won’t be much cheaper than Lily’s, but one thing I learned from the pro chefs is that high quality ingredients are worth the additional cost, so you should always spring for the highest quality you can afford.

Good question. Because although you could melt plain unsweetened chocolate and stir in some sweetener, it would likely seize like crazy. There’s no way, with something like erythritol, that you could get it to mix in, without getting a goopy, thick mess. If you wanted to use a liquid sweetener, like sucralose, maybe but I don’t like sucralose. And if you have to use a significant amount of the liquid sweetener, your chocolate will again seize. It’s very tempermental stuff. An additional oil, like cocoa butter, helps it smooth out and allows it to mix nicely with the sweeteners. And cocoa butter is so hard at room temp, it’s a good choice because it will firm up properly, rather than need to be refrigerated.
I finally got the time and mind set to make this dessert, I have been wanting to do it for so long now but felt a bit intimidated by it. I will say right now that I shouldn’t have been, it went very smoothly and I did all the layers in 1 hr. and 10 min. time :) I did bake the crust and let it cool on the counter for about 15 min. then stuck it in my freezer while the pudding was in the fridge cooling. All the layers are put together and it is sitting in my fridge just waiting for me to dig in. Can I just skip supper tonight and eat this instead!?!?! Hi Kelly, All packaged foods will have a nutrition label that list the macros per serving, including fat, protein and cabrohydrates. Net carbs, which is what most people look at for low carb and keto, are total carbs (the amount on the label) minus fiber and sugar alcohols, as explained in the article above. This dessert is amazing and always a hit! However the recipe has been recently changed or updated. This recipe is good but I feel ingredients now call for too much of the whipped cream texture and taste. I do prefer original recipe because it’s more like a chocolate pudding texture and taste. Hi Mylene, my first question will be did you substitute any ingredient in the recipe? If the outside is cooking faster it probably means that the center of the tortillas was thicker in the center. Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! Hi, My doctor strongly recommends staying away from erythritol. I notice that you use it in some of your reciepes. When I fist discovered it. It seemed too good to be true as it was so easy to bake without using sugar. Pure monk fruit which is very sweet without an aftertaste is just a powder and doesn’t have the benefits of bulk or granulation needed in baking. If anyone finds something great without erythritol, let us know.

I keep using xylitol because we tolerate it well and it’s cheaper. Even though it does raise blood sugar levels, it is minimal so I figure it’s an ok compromise. I have melted down baking chocolate and sweetened it with xylitol but haven’t used it to bake because one recipe I read pointed out that it will melt and run all over the place but still have good flavor (in something like chocolate chip cookies). My kids don’t need any help making chocolate messy! Recently, I’ve been making coconut oil candies that I sweeten with a simple syrup made with xylitol. Since it’s made with cocoa powder it doesn’t seize. We can leave it out of the fridge for 10-15 mins before we need to chill it again. I’ve also mixed in shredded coconut and just poured it in a dish and cut it into squares or eaten it with a spoon at room temperature. That’s great for satisfying the need for a sweet treat but I love the idea of cocoa butter to firm up the chocolate so you can bake with it and eat it at room temperature. I think those benefits might make it easy to live with a little crunch from the sweetener. Going to order some cocoa butter now!

This dessert is absolutely delicious! It took me a long time to make it. I’m not much of a cook. It’s a bit expensive but worth it. My goodness, this was a huge hit. My daughter licked the pan clean. My spouse said she couldn’t have any more bc he was eating the rest of the tray. We made the first version, using Lily’s chips and I added a tbsp of beef gelatin. Cinnamon on top instead of shaved chocolate. Yeah, the pieces didn’t come out pretty right away, but why waste time with perfect slice technique when you can lick the plate clean instead?

Thank you for your question Tammy. The amount of guar gum or xanthan gum needed to thicken the pudding would result in a really gummy pudding. But let me share some information with you. Mixing thickeners will allow you to use less as they have a synergistic affect. Try mixing 1 T of cornstarch or arrowroot powder with 1/4 teaspoon guar gum and 1/4 teaspoon xanthan gum (or glucomannan powder). You may be able to get away with 1/2 tablespoon of this mixture as the chocolate will help thicken the mixture, too. Let me know what you end up doing and how it works. It may help someone else. I stabilized the whipped cream with gelatin, since it will take us a few days to eat it all, and I was afraid it might get watery. I don’t know if that was necessary or not. It will take a while to trust and adjust to your new appetite. I personally found when I was low fat and on Weight Watchers, I was ravenous all day long, so to be told eat what you like was difficult to understand. By eating more healthy fats especially, will keep you fuller for longer. And depending on how long you have been dieting for, and how insulin resistant you are, will depend on how long it takes for you to adjust appetite and weight. The odd person gains weight when they start because they don’t listen to their body. Remember to eat until 80% full (it takes a while for your stomach to register you have eaten your meal) and only eat when hungry. Don’t snack if you don’t have to. Are you really hungry or thirsty (similar feelings).

(Too much wine, sugar and carbs)! I also have entered peri-menopause, which has wreaked havoc on my energy level and sleep.
