Make sure you're heating your cocoa butter slowly, microwaving in short increments and stirring in between, the cooling slowly as well. So let it come to room temp to solidify, then store in the fridge, rather then sticking the warm chocolate in the fridge or freezer to chill more quickly. We’ve been told to keep his net carbs (total carbs minus fiber but not minus sugar alcohols) around 20-25/day, and he’s having a hard time giving up all of his beloved carbs, including chocolate. From our count, it looks like each serving has almost 10 net grams of carbs, mostly from the Swerve (2 from unsweetened chocolate + 120 from Swerve + 11 from unsweetened cocoa = 133 net carbs, divided by 14). Please tell me I’m missing something … my son is salivating, and I’d love to let him have a treat! I’m new to all of this, so maybe there’s a reason I don’t have to worry. I keep using xylitol because we tolerate it well and it’s cheaper. Even though it does raise blood sugar levels, it is minimal so I figure it’s an ok compromise. I have melted down baking chocolate and sweetened it with xylitol but haven’t used it to bake because one recipe I read pointed out that it will melt and run all over the place but still have good flavor (in something like chocolate chip cookies). My kids don’t need any help making chocolate messy! Recently, I’ve been making coconut oil candies that I sweeten with a simple syrup made with xylitol. Since it’s made with cocoa powder it doesn’t seize. We can leave it out of the fridge for 10-15 mins before we need to chill it again. I’ve also mixed in shredded coconut and just poured it in a dish and cut it into squares or eaten it with a spoon at room temperature. That’s great for satisfying the need for a sweet treat but I love the idea of cocoa butter to firm up the chocolate so you can bake with it and eat it at room temperature. Hi Melanie, There are 2 versions for the chocolate layer, Option 1 and Option 2. Both options are listed on the recipe card with separate sections in the ingredient area. There is no version with both cocoa powder an xanthan gum. Use Option 1 for the version with sugar-free chocolate and xanthan gum (along with other ingredients), use Option 2 for the version with cocoa powder. Hope this helps.

No matter how you slice it, we eat too many carbohydrates. We consume many more calories than we used to, and most of those extra calories come from extra carbs (so many chips and cookies!). Thus, it makes sense to cut back some on carbs. It also makes sense to choose lower-GL carbohydrate foods instead of “fast-acting” carbs that send your blood sugar soaring. Thank you for your question Tammy. The amount of guar gum or xanthan gum needed to thicken the pudding would result in a really gummy pudding. But let me share some information with you. Mixing thickeners will allow you to use less as they have a synergistic affect. Try mixing 1 T of cornstarch or arrowroot powder with 1/4 teaspoon guar gum and 1/4 teaspoon xanthan gum (or glucomannan powder). You may be able to get away with 1/2 tablespoon of this mixture as the chocolate will help thicken the mixture, too. Let me know what you end up doing and how it works. It may help someone else. Use fat as a lever.  We’ve been taught to fear fat, but don’t! Both keto and low carb are high fat diets. Fat is our source of energy as well as satiety. The key to understand, though, is that fat is a lever on a low carb or keto diet. Carbs and protein stay constant, and fat is the one you increase or decrease (push the lever up or down) to gain or lose weight, respectively. So if your goal is weight loss, eat enough fat to be satisfied, but there’s no need to “get your fats in” once you’re satisfied.

This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

Hi I’m new to Keto. I have been reading about it, and understanding what to eat and what not to eat. My problem is I’m not sure if I’m doing it correctly. I’m constantly hungry whereas information reads that I will never be hungry. I use fats as required along with topping up with vegetables in my meals yet this does not fill me up. I haven’t experienced the Keto flu and I’ve even put on weight! I have been doing this for about 3 weeks now. Any ideas where I am going wrong.
7 carbs additional carbs devided by 16 servings? 0.43 additional carbs per serving. Definitely still low carb. I am on a low carb not a no carb diet. This delicious low carb recipe has helped me (in part) lose 45 pounds and still get my dessert fix at the end of a low carb meal. I do not think I could do a low carb diet if I had to give up sweets! It freezes well when saved in individual servings or keeps in the fridge for days. Well done!

Good question. There is no doubt that grass fed, free range, organic is best but it is simply out of the price range of so many. What is more important to start with is to eat real whole food as best as you can find. I certainly don’t buy organic all the time. Do what you can when you can. It is more important to change from cereals to eggs rather then getting hung up on a perfect source of egg. Take a look at my food brands page. It needs updating as I change brands all the time as I find better ones, but is helpful. I really try and make this as easy on ourselves as we can. We shouldn’t need a degree in nutrition to eat well. Some sites complicate things far too much. My motto is “do the best you can as often as you can”. I agree, labels are pretty poor and not standardised (net vs total carbs for example). Good luck 🙂
My daughter and I are going to give this a go! I did a stint of Whole30 last year which is much more restrictive (no dairy, no sugar, no peanuts, soy, grains…a lot of no fun), and I don’t think I can do that again. Though, to its credit, those 30 days did teach me that sugar hides EVERYWHERE–in meat, jarred spaghetti sauce, deli meats…it’s crazy! And it does have an effect on your ability to taste “real food”!
Once you are eating the right amount of carbohydrate for you, your appetite should reset and you won't be as hungry. You should eat when you're hungry and until you are satisfied, dining on foods that are allowed on plan you select. But remember: Just because a food is "allowed" doesn't mean it's a good idea to overeat it. Cheese is a good example.

This did not come out well for me. The consistency is good but the taste is super bitter. At first I didn’t add all the powdered stevia called for because it seemed like a lot of stevia for just the one bar. I wanted to taste as I went. I gradually increased hoping the sweet would outweigh the bitter but I just couldn’t seem to get it right. I took a small bit and mixed it with honey and that tasted much better. But, honey is too high in sugar for me so I was excited about using stevia. Not sure where I went wrong but I still appreciate the recipe!
