NOTE: I’m a little nervous about the super sweet blend. I’m imagining that extra stevia has been added to bump up the sweetness. When stevia is added to chocolate, it can increase the bitter flavor compounds in both the chocolate and the stevia. Go slowly and taste as you go. Hi Jason. It depends on what your definition of healthy is. If it needs to be under 200 calories per serving then you will need to cut this dessert into smaller pieces. It is very rich and very filling so if you are serving it to kids, you could easily cut it into 24 pieces. My definition of “Healthy” is sugar-free and made from scratch with wholesome ingredients and little added chemicals. If your definition of healthy is low calorie and low fat, then this dessert is not for you. There are many recipes for Chocolate Lasagna or Chocolate Layered Dessert on-line which would meet your needs. You could make it very cheaply buy buying low fat cookies, cream cheese, low fat pudding and low fat coolwhip. As far as costing the dessert… I calculated the nutritional data in a recipe program but I did not cost it out. You will have to do that yourself depending on how you want to make the recipe. When eating out, go for simple dishes such as steak and blue cheese with veggies, salads but no croutons, think meat’n’veg and no sauces is an easy way to continue when out. Some cafes sell frittatas with no pastry, quiche, etc. Even if you buy a huge meat and salad wrap then deconstruct it and eat the filling is another good option. But when looking I don’t have a 9×9 pan, only the 9×13 or an odd 10×10 square (guess my mom gave me that). Hi my name is Laurie yes low carb works I have been on a low carb diet for 8 weeks now started beginning of March my weight was 163 lbs. I now weigh 149 lbs. and I hope to be at 130-135 lbs. by sometime in July then say there. This diet if you follow it right you will be healthy and many pounds lighter its the carbs that we over eat that pack on the pounds. I’ve made chocolate bars with your recipe quite a few times, and ever took one on a 20 hour round trip car ride to see my daughter for Christmas! I’ve never had a problem with the texture that he’s talking about either! I can tell some times when I make a large batch like 2-3 times your recipe that the sweetener tends to settle in the bars! Even after I’ve powdered and sifted it! Which is actually what I’m researching now, what temp it actually melts at! I love your recipe as is! It is great! You are also right about there being a huge need for sugar free chocolate chips! I’ve only found one on Amazon and its pricy and I’m not to sure about it! I was on long acting insulin at 44 units twice daily. Short acting insulin three times daily at 25 units each. It was through the lchf eating changes I was able to get down to 5 units twice daily of the long acting and 3 units of short acting twice daily.Quite a difference in med changes. Cholesterol readings went from over 400 down to little over 200. A1c from over 9 to 7. All in a 30 day period. I had only been doing lchf for 30 days when tested. Lost 13 pounds. Stressful times hit me and started eating again. Just now getting back to lchf eating because I know this works. I need this for myself. I felt better, got around better, was much happier. It took time and constant monitoring to reduce my insulins under medial supervision. Was told to keep doing whatever it was I was doing by my pimary care as well as my endocrinologist.

Hi Mylene, my first question will be did you substitute any ingredient in the recipe? If the outside is cooking faster it probably means that the center of the tortillas was thicker in the center. Also another thing could be that you did not squeeze out all the water from the zucchini leaving some moisture in the batter that make it harder to cook. Finally if it is not golden and the outside crisp too fast it could be a too warm oven. Always cook on fan bake mode to ensure that the tortillas cook well evenly. I hope this help! I started seeing a nutritionist, who has started me on a B-12 injection 2 times monthly, and a LCHF diet. He wants me to stay between 20-35 carbs daily for at least 3 months. He says I need to buy ketone strips, to make sure I don’t go into ketoacidosis, however, I am otherwise healthy, and not diabetic. Is this something I need to be overly concerned about? I’m on my 4th day of approx. 25 carbs daily, and other than a slight headache, I feel fine.

Any suggestions for butterscotch pudding to make this with? We always made a half chocolate (on one side not mixed) and half butterscotch which was personal favorites with this combo. No idea where to begin making butterscotch pudding. Will have to research I suppose. BTW we call this Maxine for some reason through our families recipe of this. The one thing I would do differently next time is to make the first two layers the day before as the method suggests. It wasn’t really cold and set enough to layer the cream on easily and I had to be super careful not to mess up the chocolate pudding layer.

Wow 2 kg in only 16 days is fabulous. The rate of weight loss can depend on any things but mainly how much you have to lose and what your eating habits were like before starting LCHF. Steady weight loss is the key and more importantly remember all the amazing health benefits that LCHF brings. That is the real long term goal.I know it can be frustrating not to lose weight as quickly as you would like, but you are losing and you should feel proud of yourself. The only adjustment I made to the recipe, was the addition of about a tablespoon of lemon juice to the cream cheese mixture; for just a little bit of tanginess to off-set all the sweetness. This is also how we make 4-Layer Delight back home, so I thought it would work here. I’ve tried it both ways, and the little hint of sourness from the lemon really seems to make it perfect; to me and the wife at least.

If your definition of healthy is low calorie and low fat, then this dessert is not for you. There are many recipes for Chocolate Lasagna or Chocolate Layered Dessert on-line which would meet your needs. You could make it very cheaply buy buying low fat cookies, cream cheese, low fat pudding and low fat coolwhip. As far as costing the dessert… I calculated the nutritional data in a recipe program but I did not cost it out. You will have to do that yourself depending on how you want to make the recipe. Hi Megan, Sorry I didn’t get the chance to reply to your comment until now and that the pudding didn’t set up! It’s hard to tell what went wrong without being in the kitchen with you. Most likely the xanthan gum didn’t mix well enough into the pudding mixture. Make sure you sprinkle it in lightly and whisk vigorously right away. You could try adding a little more next time, but don’t add too much to avoid having the pudding get slimy. Other than that, keep in mind that the pudding will set more as you refrigerate it.

Dr. Hall published a meta-analysis of feeding studies last year that suggested that energy expenditure was actually slightly greater on low-fat diets. But Dr. Ludwig pointed out that those studies were very short, with none lasting longer than a month and most lasting a week or less. He said the process of adapting to a low-carb diet can take a month or longer.
Carbohydrate has been wrongly accused of being a uniquely "fattening" macronutrient, misleading many dieters into compromising the nutritiousness of their diet by eliminating carbohydrate-rich food.[26] Low-carbohydrate diet proponents emphasize research saying that low-carbohydrate diets can initially cause slightly greater weight loss than a balanced diet, but any such advantage does not persist.[26][6] In the long-term successful weight maintenance is determined by calorie intake, and not by macronutrient ratios.[7][6]
