Back when I worked for a cooking school, I got spoiled by the super high quality chocolate that we used. It kills me to spend the amount of money for Lily’s, which is good chocolate, but not as good as the chocolate they used in the cooking school. They used Valhrona and Callebaut. I also like Godiva. Scharffenberger’s is pretty good, but not as good as it was before Hershey’s bought the company. I can’t wait to try this recipe with those super high quality chocolates. I haven’t done the math, but it likely means the chips won’t be much cheaper than Lily’s, but one thing I learned from the pro chefs is that high quality ingredients are worth the additional cost, so you should always spring for the highest quality you can afford.


Firstly read the “How to start” page which will cover how to start slowly and give up the most obvious places of sugar first, then cut back on all carbs such as bread, pasta, rice, starchy vegetables etc. You must also cut back on all seed oils such as canola, sunflower, margarine, spreads etc. These cause inflammation. That’s a great question and I’m sorry to say that I don’t have a scientific answer for you. I can only say this: When you add water to cocoa powder, you get a liquid or goo consistency, not a solid. I can only imagine – and this is just an educated guess, since I’m not a food scientist! – that that means that cocoa powder doesn’t have enough saturated fat to hold the chocolate together, so adding more, via coconut oil, provides the structure of the chocolates. Again, just a guess, but from decades of experience baking with cocoa powder, I can tell you that it alone is not a sufficient source of saturated fat to create the rich, solid mass we consider to be good chocolate. To be honest, I have not eaten every item in the box, and was hoping they would be so amazing that they would not have a chance to survive. Unfortunately, that just isn’t the case. First off, if you don't have diabetes, DON'T GET IT. It ruins EVERYTHING. Now, back to the stuff I can't eat. This "candy" is a wonderful idea for diabetic chocolates but for me, this particular item fell short. From what I've had so far, the Russell Stover sugar free is just a good, if not better. Our local grocery store has bulk sugar free chocolate which, to me, has a better, more realistic flavor. Don't get me wrong, I think the people at Diabeticfriendly provide a product that most diabetics would embrace with open arms. I'm just not one of them. Sharon also continues to claim without the requested support that “since big manufacturers are bulking up their alternative products with all kinds of questionable oils to replace the sugar.” Again that would not be allowed to be called chocolate. From what I’ve seen Sharon is more interested in propagating her own prejudices then providing the service of real information.
It should firm up over night. Honestly, Andrea, I received so many complaints about the cornstarch (arrowroot) powder not being low carb that I reduced the amount by 1 teaspoon. Yes, the whipped cream should be spread very carefully over the pudding. Refrigerating over night should set it. Please, please, let me know if it doesn’t. Is there a way to make the sweetness of chip recipe comparable to the Lily dark chocolate? I’m very new to the low carb world and the use of sugar alternatives. I was trying to figure out why mine came out goopy and grainy. It hasnt solidified yet so i will see soon if i messed it up too much. When i was pouring my vanilla extract in it i goofed and over poured so at first i thought that would cause trouble, but figured it would be fine since i planned to just use however many splenda packets seemed necessary by tasting as i go. Then i thought hmm let me add 1/4 tsp of cinnamon and i thought that was the culprit, so i added a little more fairlife milk to help make it more liquid again…. but nope… and the flavor and consistency still wasnt where i wanted it so i added even more vanilla and milk afterf the powdered splenda…. thats when i noticed a bit of bubbling on the edges of the bowl and thought oh crud turn the heat down! I wonder if i should have added more oil but i didnt want to add extra oil and make it so it would never have a chance of solidifying.
I made this over the weekend and YUM! The only thing is that it didn’t set very well and I got more of a pudding consistency than anything. As soon as I cut into it it became a pudding/soup. It was still very good. I did use lactose free cream cheese and arrowroot powder…could that have been my downfall? Or did I not let things chill long enough. It didn’t specifiy how long to let the cream cheese filling chill so I only did about 30 min. And I chilled the whole thing overnight. Still very tasty!

Thank you for getting back so quickly. I am a perfectionist, lol. Might save that crust for something else. But when looking I don’t have a 9×9 pan, only the 9×13 or an odd 10×10 square (guess my mom gave me that). Either way, I want it perfect, so I might redo the crust and like you suggested do the 1 1/2 for the recipe for the bigger pan size. Can’t wait to take it for a dessert Saturday night!! P.S. Christy, I love this dessert and am so happy you liked it, too. I have found that the xanthan gum stabilizes the whipped cream enough to be good for about 5 days. It does make it stiff and it’s a little tricky smoothing it over the pudding layer. I just go slowly and gently. Just so you know, my recipe card has a recipe scale function. Hover over the serving size and slide it to how many servings you would like to make. It is very handy. A little cream would absolutely make it seize as unsweetened chocolate doesn’t like liquid. You can rescue seized chocolate with a little heat (on low) and the addition of even more liquid, 1 tbsp at a time, stirring constantly. But then it’s quite soft so it wouldn’t work for chocolate bars or chocolate chips. And hey, where do you get sunflower lecithin…I’d really like to try that!!!
Make sure you’re heating your cocoa butter slowly, microwaving in short increments and stirring in between, the cooling slowly as well. So let it come to room temp to solidify, then store in the fridge, rather then sticking the warm chocolate in the fridge or freezer to chill more quickly. This helps to prevent bloom, that dusty white layer than can develop on the outside of chocolate after condensation forms.
Hi Barb, That can definitely be it. Losing when you are close to goal can be more difficult. It could also be that your body’s healthy weight is a little higher than what you’d like – which doesn’t mean you can’t lose, but makes it more difficult. If just eating Keto foods isn’t working, double check the macros for your weight and see if the amount you’re eating needs to be adjusted. You’ll find more help and support in our support group here.
My recommendation to all would be to enjoy real traditionallym produced but high quality chocolate and pay attention to the main dishes instead. People usually (exceptions exist) eat a lot of crap for breakfast/lunch/dinner, then carefully select their chocolate bar that is probably well under 1% of total food volume they take. The sugar part of it can be expressed in thousands of their total diet.

Thanks Brenda for your feedback. I was not aware of the bitterness of stevia in relationship to how much or how little is used. I will keep that in mind next time I use the KAL brand. I usually use Sweetleaf but was out and had the KAL in the pantry. I too love dark chocolate so that was not the bitterness I was tasting. Next shopping trip I will get more Sweetleaf, and try the recipe again. Thanks for your help.


Commercially-made candy bars and dark chocolate truffles are made with far more ingredients than they need to be, which is not only unhealthy, but (in my experience) interferes with the chocolate taste that – call me crazy – I want. (Looking at you, Godiva) I may be a total chocolate snob, but I want my chocolate to taste like… well, mostly chocolate. When I bite into most grocery store chocolate, I can practically taste my blood sugar spiking. Ick.

I’m so glad I finally tried this recipe! I like Lily’s too, but they are expensive and the prebiotic inulin in them means I have to use them sparingly or I really suffer later. I even ordered the chip mold and some bar molds from Amazon! I can’t wait to try them, they should arrive today. Chocolate tempering machines (or temperers) with computer controls can be used for producing consistently tempered chocolate. In particular continuous tempering machines are used in large volume applications. Various methods and apparatuses for continuous flow tempering have been described by Aasted, Sollich and Buhler, three manufacturers of commercial chocolate equipment, with a focus now on energy efficiency. In general, molten chocolate coming in at 40–50 °C is cooled in heat exchangers to crystallization temperates of about 26–30 °C, passed through a tempering column consisting of spinning plates to induce shear, then warmed slightly to re-melt undesirable crystal formations.[68][69]
Once you are eating the right amount of carbohydrate for you, your appetite should reset and you won't be as hungry. You should eat when you're hungry and until you are satisfied, dining on foods that are allowed on plan you select. But remember: Just because a food is "allowed" doesn't mean it's a good idea to overeat it. Cheese is a good example.

Had I not read your sugar free post I would’ve just kept on living my regular sugar-filled life. I didn’t go 100% sugar free but was very aware of everything sweet that I put in my mouth. I keep using xylitol because we tolerate it well and it’s cheaper. Even though it does raise blood sugar levels, it is minimal so I figure it’s an ok compromise. I have melted down baking chocolate and sweetened it with xylitol but haven’t used it to bake because one recipe I read pointed out that it will melt and run all over the place but still have good flavor (in something like chocolate chip cookies). My kids don’t need any help making chocolate messy! Recently, I’ve been making coconut oil candies that I sweeten with a simple syrup made with xylitol. Since it’s made with cocoa powder it doesn’t seize. We can leave it out of the fridge for 10-15 mins before we need to chill it again. I’ve also mixed in shredded coconut and just poured it in a dish and cut it into squares or eaten it with a spoon at room temperature. That’s great for satisfying the need for a sweet treat but I love the idea of cocoa butter to firm up the chocolate so you can bake with it and eat it at room temperature. I think those benefits might make it easy to live with a little crunch from the sweetener. Going to order some cocoa butter now!
