That sounds like a good idea! I also try to avoid gums/thickeners most of the time, but haven’t found a good replacement for pudding. I’ve never tried gelatin though – it might work! I’d start with the same amount and then see if you might need more than the amount of xanthan gum to get it thick enough. Let me know how it goes if you give it a try.

As for chocolate made with erythritol, Wilbur Chocolate of Lititz, PA, once made a dark sugar-free chocolate called Apollo with a blend of erythritol, inulin, Ace-K and sucralose. I know this post is old, but in the interest of helping others who may be reading this line of commentary I was wondering if your powdered erythritol was a Swerve brand or another brand? Swerve has oligosaccharides in it; so if it was another brand without the oligosaccharides, it could affect the end result. It would have been interesting to troubleshoot why your two batches ended up so different from each other back then too.

I wish I’d read through the comments before making this. I substituted plain Trader Joe’s liquid stevia for the Sweetleaf vanilla liquid stevia. Otherwise, I followed all ingredients and instructions exactly, but it turned out grainy and bitter. I then added a drop of peppermint essential oil hoping to redeem to a better flavor, but it was no help. It might be super helpful if the recipe instructions indicated clearly to use no substitutions for brands or types of stevia.

I couldn’t find unsweetened chocolate in Australia so I added more cocoa butter and cocoa powder (1 oz of each). Delicious! I don’t mind the graininess at all and added a bit of dedicated coconut to mask it! Even my husband who hates dark chocolate likes this one and 20g (85 cals) is enough to satisfy my sweet tooth after dinner. Can’t wait to try making different flavours by adding different things to it.

Just made this, and they are really good. I was going to offer the same suggestion– taste it while it’s in the pot- only the consistency will change, not the taste. If you don’t like it, add more sweetener. I ended up adding a bit more. I like xylitol, so I had some liquid stevia drops, swelter packets, and added more xylitol at the end. I used ghee and coconut oil. I did make a mistake at the end, and after it was melted and half poured, tried to add a little more (cold) cashew milk, and it seized a bit (but still good- just grainier) so I would recommend putting all ingredients in to melt, tasting frequently, and not adding liquid to the melted mixture.
I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)

NOTE: I’m a little nervous about the super sweet blend. I’m imagining that extra stevia has been added to bump up the sweetness. When stevia is added to chocolate, it can increase the bitter flavor compounds in both the chocolate and the stevia. Go slowly and taste as you go. I’ve tried low carb on and off over the years. It’s never stuck, and I’ve read a lot of advice that just hasn’t make it any more livable for me. I’ve settled on a lowER carb diet, ditching all flours, grains, dairy, and most sugars. I never eat junk food, and cook nearly everything myself. I eat enough fibrous vegetables (broccoli, cabbage, cauliflower…) and leafy greens to stay somewhat full. Water and black/green tea are my only beverages. Even though I gave up fruit for three whole months before, it wasn’t worth it for me. I will never give up fruit again, and the whole fruit-in-moderation advice didn’t work for me, either. Fresh fruit is the very last true culinary enjoyment I have left, and my quality of life without fresh fruit–berries, citrus, melons–plummets. I don’t eat dried fruit, and I work out five to six days a week with high intensity, focusing on large muscle groups; and walk with friends or alone nearly every day. I’d rather exercise more than give up fruit. I just came back from a session with my trainer and after a lean, nutritious lunch working at my desk, just had a snack of about 3/4-cup blueberries before meeting up with a friend in about a half hour for a 5-mile walk. And that snack (I’d have had more if I’d had more berries in the fridge) made today’s workout worth it for me.

Plus, others who eat your baked goods might not know you used xylitol before sharing a bite with their canine friend, whereas it’s usually obvious if something contains chocolate. I’m with Jan. I won’t bake with xylitol and even try to avoid buying gum that contains it. (Which is increasingly difficult, by the way.)

Once you are eating the right amount of carbohydrate for you, your appetite should reset and you won't be as hungry. You should eat when you're hungry and until you are satisfied, dining on foods that are allowed on plan you select. But remember: Just because a food is "allowed" doesn't mean it's a good idea to overeat it. Cheese is a good example.

Hi Libby, I have been trying to find my way within the LCHF world for a few months and I am just not winning .. I eat a good hearty breakfast and a cup of coffee with cream and I’m good for the day till dinner when i’ll have a salad with chicken or steak .. most days my meals don’t vary (i’m easy that way).. problem is the weight is maintained and I’m just lost 🙁 please would you assist me .. anything would be appreciated 🙂
