I am wheat & dairy free for other allergy related conditions so find it hard to stick with the low carb diet. I simply cannot do any cream or milk products & tolerate small amounts of cheese. I find food very boring & then fall back on the gluten free junk. I have added coconut cream/ yoghurt & almond milk to smoothies with berries or a banana plus protein powder for breakfast. I know the banana not great but really miss real fruit. Frozen berries for most of the year not really doing it for me. Any ideas for snacks and treats that r still low carb so I don’t feel like a total ‘food leper’ my husband’s tongue in check explanation for me.

Christy, I love this dessert and am so happy you liked it, too. I have found that the xanthan gum stabilizes the whipped cream enough to be good for about 5 days. It does make it stiff and it’s a little tricky smoothing it over the pudding layer. I just go slowly and gently. Just so you know, my recipe card has a recipe scale function. I'm giving this candy only a 'fair' rating because in spite of being called 'DiabeticFriendly', it spiked my blood glucose up 40 points. I am very careful to check my blood glucose levels after eating anything new (especially anything sweet) because I manage my diabetes with diet alone. These chocolates taste great, look beautiful, arrived before the estimated delivery date and were beautifully presented. However, two pieces spiked my blood glucose as much or more as a regular candy bar would have. Your mileage may vary.... use caution!


A powdered sweetener works best. Granular would be the next best thing – everything would still come together the same way, but you might taste the granules if they don’t fully dissolve, so it wouldn’t be as smooth. I don’t think liquid sweeteners like honey, agave, or maple syrup would work, because they’d add extra liquid and would require consistency adjustments for the other ingredients. (You can try, I’m just not sure about the results.)

Yes, but xylitol only takes a minuscule amount to be lethal to a dog. Plus, others who eat your baked goods might not know you used xylitol before sharing a bite with their canine friend, whereas it’s usually obvious if something contains chocolate. I’m with Jan. I won’t bake with xylitol and even try to avoid buying gum that contains it. (Which is increasingly difficult, by the way.)

Some fruits may contain relatively high concentrations of sugar, most are largely water and not particularly calorie-dense. Thus, in absolute terms, even sweet fruits and berries do not represent a significant source of carbohydrates in their natural form, and also typically contain a good deal of fiber which attenuates the absorption of sugar in the gut.[20]
It will take a while to trust and adjust to your new appetite. I personally found when I was low fat and on Weight Watchers, I was ravenous all day long, so to be told eat what you like was difficult to understand. By eating more healthy fats especially, will keep you fuller for longer. And depending on how long you have been dieting for, and how insulin resistant you are, will depend on how long it takes for you to adjust appetite and weight. The odd person gains weight when they start because they don’t listen to their body. Remember to eat until 80% full (it takes a while for your stomach to register you have eaten your meal) and only eat when hungry. Don’t snack if you don’t have to. Are you really hungry or thirsty (similar feelings).
I’ve never used Kal sweetener for stevia and not sure how sweet or not sweet it is. I truly has seen just in using NuNaturals and Sweetleaf a big difference in sweetness. The bitterness would not be because too much was used, it is often that not enough is used. I’m sorry with all that happened but happy you could still salvage it. I’ve made the recipe twice since I’ve posted it and had no problems, but I like the taste of a dark chocolate. I will try it with a different brand of powdered stevia, I have one form Trader Joes I can try and will post the update.
I’m sorry the pastry cream has proven pesky, Douglass. Sometimes it takes “taking it too far” and scrambling the eggs to see how much cooking the mixture can take to thicken. While the above raw version is fantastic for using in no-bake treats or eating by the handful, if you want a version that you can bake with or that has the option of being oil-free, simply melt a bar of unsweetened chocolate and sweeten to taste with your favorite sweetener of choice. You can add a tsp oil for smoother results, but it’s not required. Pour into a parchment-lined container or candy molds, and freeze until firm. Then break into small pieces or pop out of the molds. Last year while I was going grain free/LCHF, I decided to get him and his siblings gluten free (While planning to eventually get him completely grain free, however that hasn’t gone to plan yet lol!) The futher away from gluten he was, the more veges he started to willing eat. We just started him off with carrots as he seemed to like them more than other veges. He loves potatoes and meat so we would tell him have a carrot then you can choose to have a mouthful of potato/meat then have another carrot etc. We just kept perserving, adding in the other veges and adding in more (Eg you can have some potato after you have eaten 4 carrots etc) and now a few months ago for the first time he cleaned off ALL his veges before he even touched potato or meat without being asked. It hasn’t happened again since BUT he will eat all of one food group before having something else.

Btw, over the weekend I tried your waffles almond flour recipe and it was AWESOME. I had tried a few waffle recipes & finally found one I like but which took a lot more ingredients and a lot of complicated prep, plus had to be toasted. I found your waffles to be super easy and simple ingredients and the texture was awesome. They browned well on the outside with no toasting needed. LOVE it. Thought I had settled on a waffle recipe until I found yours. If I could only find one that uses either coconut flour only or a combination of almond & coconut which is not eggy, I’d be thrilled as I’m trying to decrease consumption of the almond flour for the inflammatory properties.

Firstly read the “How to start” page which will cover how to start slowly and give up the most obvious places of sugar first, then cut back on all carbs such as bread, pasta, rice, starchy vegetables etc. You must also cut back on all seed oils such as canola, sunflower, margarine, spreads etc. These cause inflammation. Go back to healthy fats such as olive oil, butter, coconut oil, etc. Take a look at the lists on the page. To make your own meal plan, take a look at all my breakfast, lunch and dinner recipes. Choose which ones are easy to start with such as scrambled eggs for breakfast, salad and last nights dinner for lunch, and dinner meals made the low carb way. Speaking of texture, this is another area where sugar and non-sugar sweeteners work a little differently. Chewy, crunchy cookies – think traditional chocolate chippers – have the texture they do because of sugar’s ability to caramelize and spread when baked. I couldn’t find unsweetened chocolate in Australia so I added more cocoa butter and cocoa powder (1 oz of each). Delicious! I don’t mind the graininess at all and added a bit of dedicated coconut to mask it! Even my husband who hates dark chocolate likes this one and 20g (85 cals) is enough to satisfy my sweet tooth after dinner. Hi Gigi, Low carb and keto is about the balance of macronutrients eaten (fat, protein and carbs), not specifically meat or lack thereof. Most people on keto do eat meat, though some people do vegetarian keto. Fat is actually necessary for many body processes. There is no issue for the kidneys with a high fat diet, but if you eat too much protein that isn’t great for the kidneys. It’s a common misconception that keto is high protein (it isn’t). Keto is great for diabetics as it naturally helps stabilize insulin. All of this being said, please know I’m not a doctor and you should consult your doctor on any medical questions or before starting any diet. * Pecan meal and pecan chips are not the same thing. Pecan meal has a fine consistency, almost like flour, just a tiny bit more coarse. “Pecan chips” are much larger pieces and wouldn’t work the same way, unless you grind them into a meal/flour yourself. Most likely, the extra butter from the crust layer absorbed into your parchment paper because the “pecan chips” wouldn’t absorb it the way an actual pecan meal would.

Hi Leila, I think you could, but I haven’t tried it. I’d recommend a powdered sweetener (Swerve Confectioner’s or Sukrin Melis) if you do this, so that the chocolate pudding layer is smooth. The replacement for the dark chocolate in the pudding layer should be approximately 1/2 cup cocoa powder, 1 1/2 tbsp butter, and 3 tbsp powdered sweetener (may need to adjust to taste). Let me know how it goes if you try it!
Use fat as a lever.  We’ve been taught to fear fat, but don’t! Both keto and low carb are high fat diets. Fat is our source of energy as well as satiety. The key to understand, though, is that fat is a lever on a low carb or keto diet. Carbs and protein stay constant, and fat is the one you increase or decrease (push the lever up or down) to gain or lose weight, respectively. So if your goal is weight loss, eat enough fat to be satisfied, but there’s no need to “get your fats in” once you’re satisfied.
For many people, when trying to lose weight, the answer seems obvious: eat less. Less food means fewer calories, which in turn means less weight, right? But that's not always true. Depending on what you're eating, it's very possible that even if, for example, you skip a meal, you're still making up those calories via snacks or other meals. Further, when your body isn't getting enough calories, it can go into starvation mode.

This sounds wonderful! I’ve had the original version with sugar, before, and it is really good. I haven’t made this yet, but I’m going to cook the crust on a cookie sheet, so it will be easier to plate. If I decide to make the chocolate whipped cream version, I will use dissolved gelatin in the cream, to keep the whipped cream stable. Where I live, this dessert is called “Fat man’s dessert”. Decades ago, the school lunch ladies made a dessert like this, with a Graham cracker crust, but they flavored the chocolate pudding with peppermint. It was yummy, too!

If you can't have candy with real sugar then these are passable, but not much better, if at all, than say a Hershey sugar-free dark chocolate. Dark chocolate is usually more dense (so not soft, right?) and not as sweet as milk chocolate. These need a firm bite and the overall taste is just ok (but at least there is no chemical after taste as with some sugar free stuff), but they served the purpose. Main gripe is, at least with this seller, you have to order enough candy bars to supply a neighborhood of diabetes patients (like me). So, still searching, but in the meantime munching away at second of 24 bars!
I wanted to tell you about some changes I did to this tonight that were amazing. (Don’t get me wrong-the original is amazing too, but I was craving coconut.). I substituted coconut butter for peanut butter, coconut extract for the vanilla, and coconut stevia for the English toffee. It was so amazing with just a little whipped cream on top and a very small dollop of strawberry jam. Live your recipes!
Carolyn, I made this tonight I couldn’t find powdered swerve so I use the granulated version that I ran through my food processor. My first attempt was a glob of goo that was very gritty and unbelievably bitter. I decided to add more cocoa butter and melt the batch I made it came out very smooth and creamy but still really bitter. My question to you could I take my second batch and melt it in a double boiler and add additional sweeteners of some sort maybe stevia to come up with a less bitter chocolate?
This is going to become a Christmas Day staple at our house. We celebrate our Southern Hemisphere Christmases with beach visits and sprinkler play, and turning on the oven for more than ten minutes seems very wrong when it’s 37 degrees C. I managed to whip this up on Christmas morning (we had a quiet one this year). It tasted amazing and looked beautifully festive. Thanks to the detailed instructions, I managed the pudding bit with very few lumps and felt very proud. The finished product is huge – I agree that it would be great for a special occasion; there’s really too much for one family unless you have a lot of people around. I made it circular like a pie and stuck the leftovers in the freezer – it froze beautifully, and tasted like ice-cream cake when frozen. The one thing I would do differently next time is to make the first two layers the day before as the method suggests. It wasn’t really cold and set enough to layer the cream on easily and I had to be super careful not to mess up the chocolate pudding layer.
