I made this for my dad’s birthday last night! He is diabetic, and I’m trying to watch my sugar intake, so I wanted to find a recipe that would be healthier without sacrificing flavor. THIS. I’m a little wary of sweeteners and was originally going to use coconut sugar, but when I compared sugar levels, I had to go with the Swerve. I warned people ahead of time, just in case they didn’t want to intake a sweetener. My sister is breastfeeding too, so I wasn’t too sure how she felt. Anyway, it was a hit! I use half pecans and half raisins, completely forgot about the coconut, and messed up the frosting recipe, but it still came out great! Oh, by the way : We are prematurely killing our beloved pets with carbs. Dogs and especially cats need to eat meat, but commercial pet food is mostly corn & wheat, which was bad enough before being poisoned by weed killer (“Round-Up” which is soaked into all American grain today) …. Huge numbers of cats and dogs now suffer & die from kidney failure, and the only explanation is what we are feeding them. My kitties now get chicken and tuna, which is a lot cheaper than any ‘gourmet’ canned food. Cooking for them is kinda fun, for that matter.
I know you posted a few months ago, but I thought I would reply just incase its still relevant. After having a daughter who LOVES veges, I then had my son who at a year old suddenly refused veges. It was getting so bad he would make himself throw it up if we forced him. But we kept on going trying everything we could while getting extremely frustrated (While also being told by everyone he was too small and sickly (Which he always was but got worse when he stopped eating the veges)

And these homemade sugar free chocolate chips bake well too, I am pleased to say. I added them to some brownies, and I also baked them up in my Keto Double Chocolate Muffins. They held their shape nicely and didn’t  totally liquify and run all over the pan, as I feared they might. They certainly held up about as well as any bar of chopped dark chocolate I’ve ever used.

Carolyn, I made this tonight I couldn’t find powdered swerve so I use the granulated version that I ran through my food processor. My first attempt was a glob of goo that was very gritty and unbelievably bitter. I decided to add more cocoa butter and melt the batch I made it came out very smooth and creamy but still really bitter. My question to you could I take my second batch and melt it in a double boiler and add additional sweeteners of some sort maybe stevia to come up with a less bitter chocolate?
